September 18, 2025 Breakfast - Sausage and shallot Omelette Lunch - Mary and Tito’s. Dinner - Chicken Curry with Rice
I made a two egg omelet with shallot and sausage for breakfast.
At 9:30 we drove to the recycling center to drop off bottles and then we drove to Kaseman for a procedure.
While she was having her procedure I drove to Istanbul Cafe and bought fresh pistachios, Earl Grey Tea, 8 candies, feta cheese, and a bundle of 10 large pitas.
When I picked Suzette up we drove to an estate sale at 4th and Alamosa in the north valley and then on our way back home stopped at Mary and Tito’s for lunch around 12:30. Miraculously it was not terribly crowded and the 11:00 lunchtime crowd was clearing out so the wait was only a couple of minutes.
Suzette ordered one a la carte carne adovado enchilada and I ordered my usual blue corn enchiladas with an egg and beef with double beans with red chili and onions. We shared 1/2 of the beans and I took 1/2 of my plate home for lunch tomorrow. We both drank water.
After lunch we went home and Suzette left almost immediately for an appointment.
I watched the market close and with both Apple and Nvidia up it was a huge day with a portfolio gain of over 1.6%.
I rested for 30 minutes and then watched the news.
When Suzette returned she simmered the chicken bones and wings with a mirepoix and strained it at 5:30.
At 5:30 we started cooking. I chopped 1/2 of an onion, I peeled, cored and diced two Fuji apples and peeled and diced, four cloves of garlic and diced the neck of the roasted butternut squash while Suzette diced a chicken breast and a cup of dates. We had run out of raisins. I then rough cut the rest of the butternut squash and we bagged it in a freezer bag and put it in the freezer.
I then cooked a cup of rice in two cups of chicken broth.
Then I sautéed the onion, and added the garlic, apples, and finally the chicken and dates. After few i of sautéing we added chicken broth and a can of coconut milk and several T. of madras curry powder and simmered the curry for about 1/2 hour until the the rice was ready.
We ate bowls of rice covered with curry and flakes of shredded coconut.
After dinner we watched PBS’ Midsomer Mystery. Then Suzette went bed at 9:15.
I stayed up to watch a fabulous episode of Foyle’s War and went to bed at 11:30.
