September 20, 2025 Brunch - shrimp, Mushroom, shallot, and Manchego omelet. Snack - Shrimp Salad on Toast. Dinner - Holocaust Museum Gala

I woke up at 5:00 and watched PL soccer until noon and the TCU beat SMU in football.

I fixed brunch around 9:30, a shrimp, Mushroom, shallot, and Manchego omelet that was wonderfully creamy inside.

I also toasted a slice of Bosque Bakery whole wheat sourdough bread. I buttered and spread jam on mine. Suzette ate hers plain.

Then Suzette drove to the Center to rent an apartment and I rested and read and watched football and napped until 3:00 when I ate Swedish shrimp salad Skagenrora on a slice of toasted whole wheat bread.

We the drove to the Bosque and walked to the two lakes but there were no ducks visible.

When we returned we got dressed for the Holocaust Museum Gala. We were the guests of Bill and Regina. Regina is the President and moving force to try to build a permanent museum in Albuquerque.

I sat by Bill and we talked water and legal stuff. The dinner was lovely. We shared a dish of chicken on mashed potatoes and a grilled Portobello mushroom filled with grilled slices of yellow squash, tomato, and eggplant around which was a ring of rice drizzled with marinara sauce and topped with wilted spinach. After dinner there was a period for donations and I donated $1000.

We arrived at home at 9:00.

Suzette watched death in Paradise and I blogged and read.

Bon Appetit
