March 6, 2024 Lunch - Vietnam 2000. Dinner -Sautéed Salmon filets with rice and Stir fried vegetables
I woke up at 7:30 as the market opened and it took off again today. By the end of the day it had made up for yesterday’s losses and my portfolio hit a new high.
At 8:45 Suzette went to the Art Museum to help the Foundation hang the miniatures show.
At 9:30 I toasted two slices of a Kaufman rye bagel and spread cream cheese on them and garnished them with slices of onion, Gravad lax, and capers.
I drank hot tea with milk and sugar.
I then worked until 12:30 after Suzette returned at 11:45.
We drove to Vietnam 2000 at 1:00 and amazingly the EUFA match between Man City and a Copenhagen team was on the TV.
We sat at the table in front of the TV and I ordered duck leg soup and Suzette ordered rice sheets on a bed of sautéed mung bean sprouts topped with fried egg rolls and sautéed shrimp and an iced coffee.
We also ordered an order of fried egg rolls to take to Willy.
I love duck ant way it is served but a duck flavored soup is interesting and not terribly expensive at $12,50.
After lunch we drove to Talin so zsuzette could buy cans of Goya garbanzo beans. We also bought a bag of sprouted mung beans sprouts, a daikon, and Suzette bought Norwegian mackerel for the bistro appetizer.
We then drove to Total Wine, where Suzette bought two bottles of Shailding scotch p. And we drove home and rested until 6:00 when we started dinner.
I had invited Willy to dinner with us because he loves salmon.
I cooked a cup of rice with 1/2 tsp. of dehydrated dashi and about 1/2 T. of dried seaweed.l have become fond of a dashi and seaweed flavor for my rice.
Then I minced a shallot, Suzette de-stemmed a handful of snow peas, I sliced two mushrooms, and chopped two cloves of garlic.
Suzette seasoned the two salmon filets with timur pepper and a dash of salt.
At 7:00 Suzette started sautéing the salmon filets and I started cooking the vegetables in the wok with four slices of ginger to which I added a dash of salt and sugar. I also made a seasoning sauce of Chinese rice cooking wine, soy, sesame oil, corn starch and water that I added after the vegetables had cooked a bit and softened in order to thicken and flavor the vegetable dish.
Willy arrived a bit after 7:00 and we served the sautéed salmon on a pile of rice with the stir fried vegetables on the side.
The salmon was sautéed perfectly. It was moist and continued to cook as we ate from the edges toward the center, so there was no uncooked core.
The dinner was excellent but the best part of the meal was the wine. It was a 2020 Dr. Konstantin Frank Pinot Gris we had bought on our trip to the vineyard in the Finger Lakes several years ago. It was mercurial and well balanced with both sweetness and acidity. I definitely want to buy more of it and try other Pinot Gris wines from the Finger Lakes.
We watched the Episode of Who is feeding Phil on Mumbai. We love the series because of both Phil’s willingness to try all types of food and his humor, especially the segment on jokes included in each episode.
After dinner and the episode Willy left and we ate some spumoni ice cream and went to bed at 10:00.
