April 15, 2026 Breakfast - Enchilada, beans, and egg, Lunch - Grits and Spaghetti Sauce. Snack - Grits and Spaghetti Sauce. Dinner - Sautéed Salmon Filet with cooked Diced Asparagus tossed with Parmesan cheese and Bistro Mashed Potatoes

April 15, 2026 Breakfast - Enchilada, beans, and egg,  Lunch - Grits and Spaghetti Sauce. Snack - Grits and Spaghetti Sauce. Dinner - Sautéed Salmon Filet with cooked Diced Asparagus tossed with Parmesan cheese and Bistro Mashed Potatoes


Today was exceptional in several respects. The market and my portfolio made new highs today, I met with Dr. Adi who ended my dialysis for now, and I walked over 4100 steps for a new record.


I was busy most of the day. I woke up at 7:15 and watched the news until 8:00 when I fixed a quick breakfast. I heated about 1/2 of the 2/3 of the enchiladas and beans from yesterday’s lunch at Mary and Tito’s and added a fried egg and a toasted blue corn tortilla.




Then I drove to Sandia Dental for a teeth cleaning at 9:30 and then drove to El Super to shop for produce. I bought lemons, sweet limes, Fuji Apples, a pineapple, a papaya, three mangoes, four oranges, cilantro, green beans, mango yogurt, zucchini, two eggplants, a yellow bell pepper, brown onions, red onions, five Roma tomatoes, a bunch of leeks, chicken leg quarters, boneless pork ribs, green onions, and three large avocados.


I then drove home and unloaded the car and heated a plate of grits cohered with my meat and mushroom spaghetti sauce. It was almost 12:30 when I started eating so put most of the dish in the fridge after a few bites and drove to dialysis to arrive by 1:00.



Dr. Adi reviewed my charts and took me off dialysis for now and prescribed several new medicines to help strengthen my kidneys.


Here I am next to a dialyses machine.



At around 2:00 I drove to Costco to pick up my new meds and waited until 3:00 to pick them up.


I also bought a box of delightful Danish cookies with a lemon filling.


When I arrived at home I unloaded the rest of the groceries and checked the market. It was another huge day for the NASDAQ that rode to a new all time high by notching an additional 377 points.


My portfolio rose another 1.1% to a new high.  


I ate the rest of the uneaten grits and spaghetti sauce as a snack at 3:30


Then I lay down at 4:00 to watch Ari until Suzette arrived around 5:00.


I diced the ingredients for ratatouille, a gold bell pepper, an eggplant, 1 1/2 onions, four cloves of garlic minced, a cup of fresh oregano minced, two zucchini diced, and two cans of diced tomatoes.



After I filled the large casserole Suzette took over the cooking and7:00  added olive,oil and cooked the ratatouille over low heat from about 5:45 until 7:45.


Dinner - We also cooked dinner. I fetched the leftover Bistro mashed Potatoes from the garage. Willy came over around 7:00 and fetched the asparagus from the garage. Suzette diced about a dozen stalks of asparagus and cooked them with grated Parmesan cheese and some herbs de Provence.


We thawed three salmon filet last night and garnished them with herbs debProvence, lemon zest, and lemon juice. Suzette then sautéed the salmon filets and served each with asparagus and mashed potatoes and a wedge of lemon.




Willy and I went to the garage and fetched a bottle of Red Newt dry Riesling that was really delicious and paired nicely with the sautéed salmon.


Willy left around 8:00 and we went to bed around 8:30, I to blog and Suzette to sleep.
