April 14, 2026 Breakfast - Gravad Lax and Bagel. Lunch - Mary and Tito’s with Alan Dinner - Fresh and Green Peas with Pasta

 

April 14, 2026 Breakfast - Gravad Lax and Bagel. Lunch - Mary and Tito’s with Alan  Dinner - Fresh and Green Peas with Pasta

I awakened at 7:00 and watched the Market open up until 8:15.


I ate the leftover bagel and Gravad lax sandwiches from yesterday for breakfast.



At 11:30 I met Alan at Mary and Tito’s for lunch. He ordered a breakfast burrito  with eggs. I ordered blue corn enchiladas with double beans, extra onions, and red chili. Alan ate all of his burrito but I was able to eat only 1/3 of my enchiladas because they were very rich.

After lunch I returned home and began transcribing the book club’s discussion at our last meeting.


Then at 2:30 Frank came and I drafted a letter for him. At 3:00 the Xfinity technician came and installed a wireless fiber optic main box for our living room TV that got the bedroom working and even got the sound on the TV room TV back on. 


I then checked the Market and I discovered that it was a great day in the market with my portfolio increasing by over 1.9% to its second highest finish ever. Tomorrow might be the day it reaches a new all time high.


At 4:00 I watched Ari when Suzette arrived from work.


We checked the garden and discussed dinner. Suzette wanted to make the fresh and green peas with pasta again. This time we used the thickened leftover Mornay sauce made with Racalette last night. We de-stemmed several sugar snap peas, snow peas, and I grated about 1/2 of Parmesan cheese. Then Suzette went to the garden and picked a basket full of fresh mint and several pea shoots. I minced the fresh mint.








Suzette reheated the Mornay sauce in a pot until it flowed smoothly and i added about 1/4 white pepper and grated fresh nutmeg to the sauce.


Suzette microwaved the leftover orecchiette pasta and, separately, the snow peas, frozen English peas, and sugar snap peas she had cut in half lengthwise.


She then assembled the dish. She filled pasta bowls with a goodly puddle of Mornay sauce. Then she laid a pile of pasta she had tossed with the fresh mint.  Then she dusted the pasta with the shredded Parmesan cheese and finally garnished the dishes with the peas and laid a pea shoot on top.


This rendition of the dish was better in two respects, separating the sauce and seasoning improved its flavor and Separating the sauce from the pasta gave the dish a cleaner presentation, especially of the peas.


After dinner we watched Finding Your Roots and went to bed.
