November 7, 2024 Breakfast - Onion, sausage and Egg taco Lunch - Tabouli Salad with Salami, tomato, and cheese sandwiches. Dinner - PPI Eggplant, Mushroom, Moo Goo Gai Pan and Salmon Fried Rice.

November 7, 2024 Breakfast - Onion, sausage and Egg taco  Lunch - Tabouli Salad with Salami, tomato, and cheese sandwiches.  Dinner - PPI Eggplant, Mushroom, Moo Goo Gai Pan and Salmon Fried Rice.


We spent the night in TR and Linda’s casita and were snowed in in the morning by about 15 inches of snow. Linda had been kind enough to put two green Chile bagels and a small pitcher of milk in the fridge and brought over a box of Twinning chai tea bags, so when we awakened Suzette heated a bagel and buttered it and we ate it with chai tea for me and coffee with milk for Suzette.



I started watching the stock market programs and could not stop as the market surged for a second day. T.R. brought us a snow shovel and we dressed and shoveled a path to their house at around 9:30.  Linda had little smokies, eggs, an onion, and flour tortillas for me to make burritos.


I sautéed minced onion, the chopped up little smokies, minced garlic, until they were browned and the added three eggs whisked and scrambled the ingredients until they became firm.  Then I toasted two flour tortillas on the    Cast iron griddle that fit on a gas burner on the stove. Then Suzette and I filled a toasted flour tortilla each with the scrambled egg mixture and ate breakfast.


At around 10:00 we turned our attention to getting the mini up the 200 foot long driveway to Old Pecos Trail.


Suzette and I shoveled a path through the snow and then Suzette tried with pout much luck. I made a mistake and told her to go slow and that did not work. Finally, T.R. asked, “May I try.” 


We both said, “Of course.”


T.R. Got in the mini and gunned the engine and skittered up the driveway to the edge of Old Pecos Trail.


I then got in the driver’s seat as T.R. said, “It reminds me of my racing days, You gun it and hold on tight to keep it in a straight line.”


Lesson learned. I gunned the engine into high RPMs and the car skittered across the last four or five feet of snow onto Old Pecos Trail that was free of snow and we were on our way home,


The adventure of shoveling our way out of the driveway and tension of driving home passing and being passed with snow on both sides of the highway tired us out and we lay down and napped when we got home.


Then at 2:00 I went to the kitchen and made a tabouli salad with romaine lettuce and tabouli dressed with a drizzle of olive oil and the juice of 1/2 lemon. I added nine green cracked olives for a little more Middle Eastern flavor. Then I toasted two slices of enriched whole wheat bread, spread Mayo on them and then garnished them with slices of tomato, salami, and Jarlsberg and then heated the sandwiches in the microwave to melt the cheese. I drank water and felt like I was getting back on a normal diet.




After lunch I checked the effect of the last two days of massive buying activity and found that my portfolio had grown by 3.75% to an all time high along with the NASDAQ and S and P that also reached all time highs.


We rested some more until 6:00 when we watched house hunters International on the HGTV channel. I suspect we will be watching lots more of HGTV and the stock market channel during the second Trump Presidency And I will start reading more New Yorkers than I have been lately.


At 6:30 Suzette heated the PPI Eggplant, Mushroom, Moo Goo Gai Pan and Salmon Fried Rice and I made a cup of green tea for our dinner.




I then watched some Thursday Night Football and we went to bed at 8:00.


With the yard covered with snow it appears we have begun winter hibernation.
