November 11, 2024 Lunch - Pita Pocket Sandwiches Dinner - Sautéed Spaghetti with chicken and Yellow Squash
I sold 200 shares of Enphase, as it has fallen since Trump’s election.
I then ate two oatmeal cookies and drove to Shahin’s to sign an appointment of his insurance company as my insurance broker at 10:00.
I then drove to El Super and bought more lemons to peel to make limoncello, plus limes, a pineapple, a papaya, oranges, and 3 ataulfo mangoes for tropical fruit salad, plus Brussels sprouts, green beans, brown onions, an Anaheim chili and zucchinis for Calabacitas, milk, three avocados, corn chips, and cilantro for guacamole, and a cucumber.
I was getting tired so when I arrived at home around 11:30 I toasted two pita pockets and stuffed them with slices of Lebanon Bologna, feta cheese, red onion, lettuce, and tabouli and drank a glass of yogurt milk.
I then rested and read the Ancient Celts book until 4:00 when Suzette arrived. I opened the gate and we pulled a bale of hay Suzette brought home into the garden.
Then I finished peeling the 12 additional lemons for the limoncello and Suzette put them in a large jar with 1.75 liters of 151 Proof alcohol. We will now wait 20 days for the lemon peel to infuse the alcohol and then Suzette will add sugar and bottle the finished limoncello.
Suzette had thawed a bag of spaghetti we froze when we traveled to Spain in August and sautéed it with diced chicken she cooked two days ago to make chicken broth and a diced yellow squash, spinach and shishito chilis. I grated Parmesan cheese and opened a bottle of Martin Codax Albariño for a lovely dinner.
We watched Antiques Roadshow and then Suzette went to bed around 10:00 and I watched Rachel and wrote this blog entry.
