November 15, 2024 Lunch - Indian food at Amy and Vahl’s Dinner - Smoked Pork, onion and guacamole Quesadillas
At 8:45 I drove to the County Building and filed Frank’s deed and assessed the property.
Then I drove home and ate a chocolate Croissant and drank a cup of tea before driving to Amy and Vahl’s house at Eldorado. We arrived a bit after 11:00 and Amy drove us to the Library in Eldorado for its book sale. I found a paperback edition of “Movin’ On” by Larry McMurty and Suzette found two gardening books. We then drove back to Amy’s and she heated a pot of Chicken Tikka Marsala and a pot of red bean dhal.
Vahl arrived soon after we arrived and we talked in the seating area, as Amy calls it that is part of their large, sitting, dining, and kitchen area.
There was a bowl of basmati rice and we filled our plates with rice, chicken tikka Marsala and Dahl and sat at the table. At each seat was a small plate with a pile of thick riata made with Greek yogurt and a pile of baby spinach leaves and a glass of water. There was also a plate of warm naan
We enjoyed Amy’s Indian lunch immensely, even though she apologized r that it was made with a sauce from a bottle. My reply was, “But you knew how to orchestrate the ingredients into a wonderful meal.”
We talked until 2:00 when we drove to Santa Fe Art Auction to pick up the three paintings we bought during last weekend’s auction.
I am more pleased with these three pieces for the money than any previous auction purchases except for the Nordfeldt portrait, Mexican Man with Pink Sweater”.
After they loaded the pictures we drove to Stephen’s. I did not buy anything but Suzette bought 8 small tea spoons and three wrought iron stands to hold a flat object like a painting or a ceramic plate. I think Suzette said she would use them to hold pressed glass artworks.
We then drove home arriving at 5:00.
I then made guacamole and we ate some with Mexican corn chips and we finally decided on making a smoked pork, cheese, onion, and guacamole stuffed quesadilla for dinner.
My guacamole combines avocado, minced onion, a little garlic and salt plus juice of a lime and a few drops of Cholula red sauce.
For the quesadilla I minced the smoked pork chop, some onion, and cilantro and Suzette sautéed the pork and onions. Suzette shredded a cup of Dubliner cheddar cheese and then buttered two large flour tortillas and started sautéing on side of one tortilla in a skillet of melted butter. She then sautéed one side of the other large flour tortilla and then put the ingredients on the toasted side of one tortilla and put the buttered side of the other tortilla on top of the ingredients. She flipped the quesadilla to toast the outside of each tortilla to melt the cheese inside the tortillas and made a Cholula crema to dip the slices of quesadilla into.
Suzette fetched a Carlsberg tall boy and a Negra Modelo and we split each between ourselves.
As we ate Mickey and Rebecca called and we discussed Mickey’s new crypto hedge fund and several other things like the value of 524 Romero.
After the telephone conversation ended we watched Colbert’s monologue from last night and a little football and went to bed at 9:30.
We are a little depressed these days and do not feel like traveling on a big, long trip like the one to Spain in August and September for a while.
We are thinking about inviting Aaron and his daughter for Thanksgiving to make cookies and we are thinking about cooking a meal for our favorite neighbors in December.
I have stopped eating chocolate with nuts until my gums get better, so I did not eat any dessert this evening.
Instead, I made a gin and tonic after dinner and Suzette drank a cognac.
