November 12, 2024 Breakfast - fried Sausage, eggs, and onion and toast. Lunch - Lamb and tabouli Pita Pocket Sandwiches. Dinner - Asturian beans with carrots, chorizo, and smoked Pork chop
I woke up at 7:30 and watched the news and worked until 9:30 when I made breakfast. I was hungry, so I made my favorite American style breakfast of fried eggs over easy, a slice of parry sausage, and two slices of onion sautéed with the sausage. I also toasted two slices of the fresh Trader Joe’s Ciabatta spread with butter and Portuguese plum preserves. I drank a cup of chai.
At 10:30 I put the casserole of beans on low heat to simmer and walked to the bank to deposit a check.
For lunch I toasted two halves of a pita and stuffed each with labni, a slice of red onion, tabouli, and 1/2 of a lamb kebab at 1:45 but clients came at 2:00 which prevented me from eating the sandwiches until 3:00.
I rested until 4:30 when another client came and we worked on his case until 6:45, when I joined the mediation group until 7:00, when I finally sat down and watched Finding Your Roots until 8:00 at which time I ate two bowls of beans.p with slices of ciabatta.
The market was up and down all day. My portfolio finally ended up .03% thanks mostly to NVDA.
We watched a few minutes of Lawrence and then I took out the trash and we went to bed at 8:45
Dinner - Suzette soaked and began cooking a casserole filled with diced smoked pork chops, a link of chorizo, 1/2 cook chopped onion, and 3/4 cup of chopped carrots that she sautéed in 3-4 T. of olive oil until the carrots were tender. Then she added 1 1/2 cups of large Spanish Asturian white beans that had been soaked overnight and added water to cover the beans and simmered the beans until tender. I started simmering the beans at 10:30 on low heat and ate them for my dinner at 8:00. Suzette ate a bowl of beans at 4:30 and announced them tender.
