August 5, 2025 Lunch - Reheated Enchiladas and refried beans Dinner - Penne Pasta with tomato sauce, chicken, and grated Gruyere cheese
I ate my usual granola with blue berries and milk for breakfast.
At 10:30 I had a telephone conference with the two realtors in a sale. At 11:00 I had a 1 1/2 hour zoom meeting with Rahim and the contractor.
The I checked the market and my portfolio was down, but only .4%, due to a surge in Palantir.
Then for lunch I heated up the other 1/2 of my Mary and Tito’s blue corn enchiladas with beef and an egg and refried beans.
I had problems with my computer all day but managed to get my pleading filed by 5:00.
I then made a tomato sauce with the five or six large Roma tomatoes we bought a week ago at El Super, plus oregano, and onion, basil, red wine, and tomato paste. It had a decidedly sweet flavor that was very pleasant.
I minced the chicken breast and boiled a handful of penne pasta and grated a cup of Swiss Gruyere cheese.
I watched Finding Your Roots and Suzette worked in her office until 8:00
Then, when the pasta and tomato sauce were cooked we filled our bowls with pasta, garnished it with chicken and cheese and heated it in the microwave. Suzette ate a lot less pasta than I did. I wanted to load up on carbs for tomorrow’s traveling.
We drank the last two glasses of Embroidery Pinot Noir from California.
Then we packed our grips and went to bed by 10:00.
