August 22, 2025 Breakfast - bagel with cream cheese and Swiss cheese and Leftover enchiladas. Lunch - Trout Salad. Dinner at Crystal and Doug’s

It was a hectic but fun day. I awakened at 5:30 and drafted a motion for an hour.

Then I checked the pre-market and it was down with Nvidia down $2.56. I ate a bagel and the leftover enchiladas from yesterday’s lunch and then rested until 8:00 when Suzette, who worked at home today, and I watched Fed Chair Jerome Powell give a magnificent speak at the annual Jackson Hole  Economic gathering. As he spoke and said he thought there may be a need to lower interest rates the market reversed course and every stock in my portfolio went positive. I had a great day with my portfolio rising 1.869% to an all time high thanks in part to a turnaround of Nvidia to close at a $3.01 gain.

At 11:30 I picked a basket full of lettuce while Suzette hard boiled four or five eggs. Then we used the rest of the trout from last night plus cherry tomatoes from our garden, 1/3 of a cucumber, four slices of red onion, and two hard boiled eggs to make salad. For the dressing we combined some of the existing Dijonnaise dressing made with garlic and herbs from our garden with some of the tartare sauce Suzette made for the trout dinner last night. The combination dressing was an improvement on both because it was creamy and had a  flavor that combined the sweetness of the tartare sauce and the vibrant tartness of the Dijonnaise into a smoother more balanced texture and flavor.

This thick creamy dressing was similar to the crab sauce I make that combines Mayo with cocktail sauce and mignonette sauce.

I liked the dressing and it complemented the trout perfectly.

After lunch at 1:30 I went to review a closing package at Bill Turner’s office.

While I was working at Bill’s Suzette made a batch of bread and butter pickles with the cucumbers from our garden.

When I came home at 3:30 I found a check in the mail that needed to be deposited in Southwest Capital Bank so I walked the three blocks and back to deposit the check. Then we showered and dressed for dinner. I opened the wine suitcase and we selected a Hermann Wiemer Cabernet Franc to take to Crystal and Doug and Suzette filled a jar with warm bread and butter pickles and put them in a gift bag and at 6:00 we walked the one block to their house.

When we arrived they made us gin and tonics with Irish Bohane Gin and served us Crystal’s fabulous grilled paper thin slices of eggplant drizzled with honey and balsamic vinegar and roasted pinon nuts

We sat on their outdoor patio to which they have added gas lights and a misting system that kept us hydrated and cooled.

They are leaving for a month long trip to Portugal, Spain, and Southern France on August 31, so we talked about things to do and see and they opened a bottle of Juan Gil Rioja.

Then Crystal fixed dinner, thick spaghetti with burrata and a green salad with a white Cotes du Gascogne. After dinner Crystal served us Panna Cotta.

We talked until 9:20 when we received a call from Luke that his plane fron Kennedy had landed, so we said a hurried goodnight and walked home and then drove to the airport to pick him up.

When we arrived home we talked for a few minutes and I drank a cup of tea and went to bed.

Bon Appetit
