May 18, 2021 Lunch - Salad. Dinner - Fish Tacos with green bean salad and mango and avocado salsa
Today the early gains in the market fizzled into a .8% loss by the end of the day. I got through all the phone messages, paid property taxes and prepared a tax schedule for 2020 taxes and then at 2:30 laid down to read and rest and when Suzette came home, we both rested until 6:30. She had gone by Sam’s Club and bought corn and flour tortillas and shredded mozzarella cheese.
I ate granola, blueberries, mango, milk, and yogurt for breakfast at 10:00.
Then at 1:00 I made a big salad with lettuce, Roma tomatoes, cucumber, sweet onion, and anchovies with Cesar dressing.
As we started to prep dinner Willy called and we invited him to dinner.
Suzette cubed a Mahi Mahi fillet and floured the cubes and then made a string bean salad. She snapped and steamed about 1/2 lb. of green beans and hard boiled eggs. Then she chopped egg and added pimiento pepper and sweet onion and made a vinegar and sugar dressing.
While she prepared those dishes I made a mango, avocado, sweet onion, and tomato salsa with the addition of the juice of one lime and a few dashes of Cholula salsa. I then fetched three Negra Modelo beers.
When Willy came he looked at the van and we discussed our trip.
Suzette heated corn tortillas, chopped a cup of lettuce, and fried the floured fish cubes in olive oil.
We opened the beers and ate soft tacos with bean salad, and mango salsa.
