January 7, 2023 Breakfast - Bagel and cream cheese and lax and red onion Lunch - Calabacitas with Pork Belly. Dinner - Pita Pocket stuffed with tabouli, feta cheese, and Labni


We ate lightly again today. 


I toasted a bagel for each of us and spread cream cheese and garnished them with lax and red onion but Suzette thought the lax was getting old and so I ate both slices and Suzette finished the chicken salad and we threw out the last of the Gravad lax.




Then around noon we made a new batch of Gravad lax using the fresh dill I bought at El Super, two matched filets of salmon we bought at Costco yesterday, 1/2 cup of sugar, 2/3 cup of salt, and a tsp. of crushed black pepper.


We weighted the fish down with a brick and put it into the fridge to cure.




I watched football most of the day.  I was particularly pleased that the Cowboys beat the Commanders and Philadelphia lost, w high should give the Cowboys home field advantage in the playoffs.


After we made the Gravad lax, we made Calabacitas.  I diced a medium onion, about 8 small cloves of garlic, a Pasilla chili, and three Mexican Squashes and Suzette cut the kernels off three ears of white corn.  Suzette first  cooked the onion, garlic, and chili and then added the corn and calabazas.  After those ingredients cooked fully she added a can of diced tomatoes and a can of black beans and cooked the mixture for a while.


Around 3:00 Suzette heated some of the Calabacitas with squares of PPI pork belly and we ate a late lunch with glasses of Kirkland Sauvignon Blanc.





We then walked about a mile in the neighborhood.


When we returned I settled in and watched the Cowboys game and some of the Green Bay game.


We are replicating the Costa Rican Blue Zone diet of combining corn, beans, and squash. It was quite filling.


We really did not get hungry for dinner, but when Willy came over around 8:00 whe Suzette fixed him a bowl of meatballs covered with Romesco sauce and Willy served himself some cream of carrot soup and some tabouli. I made myself a pita pocket sandwich filled with tabouli, feta cheese, and labni that I ate with black olives, a pickle, and a couple other pickled turnip sticks.




Later I toasted and buttered three slices of French baguette and spread Affinois cheese that Suzette bought on the Murray Cheeses discount counter and we shared the cheese and the last of the 2019 De Ponte Reserve Pinot noir that was still quite good.





It was a day of cooking
