March 3, 2026 Breakfast- Rice, Chicken, mushroom and onion Egg Foo Young  Lunch - Costco Hot Dog.Dinner - Mussels in Parmesan Cream Sauce and Mussels, Corona Beans, and Spinach Stew


Today was a day of old and new recipes. For breakfast I made one of my favorite dishes, Fried Rice Egg Foo Young. For Dinner Suzette made a copy of an appetizer at D’ Cortes in PV on February 12.


For breakfast I sautéed mushroom slices and about 2 oz. of onion and then added the chicken and rice left from last night’s dinner and when every thing was heated I stirred in two eggs and cooked the mixture that resulted in a sort of cake like egg foo young.




Also for dinner Suzette prepared a bean, mussel, Miso, and Spinach stew that was similar to the beans with clams we ate in Spain.



All three dishes were exceedingly delicious. At 11:30 we drove to Costco, where we bought a wedge of real Parmesan Reggiano cheese that made a big flavor difference in the cream sauce made with the broth created by steaming the mussels in a poaching liquid of water, white wine, garlic, and shallot plus some heavy cream for richness.

We also bought seven bottles of wine, four Gran Reserva Riojas, a Scott Family Sauvignon Blanc from New Zealand, another Faustino Rivero Ulcea Albariño, and a Brunello di Montalcino plus butter, lemons, limes, a five pound bag of mussels, pistachios, and espresso  coffee.


After dinner we combined the leftover Cream Sauce and the broth left after steaming the mussels for future use as a PPI.


We opened a bottle of our favorite Albariño, Faustino Rivero Ulcea.


Yesterday I received my partially completed form for a brokerage and bank account at Icici Bank and Direct Brokerage. I am very excited that I may be making progress in dematerializing my Indian bank shares.


I also helped Urbano with a real estate problem, reserved dinners at Joseph’s and Izanami and walked 3333 steps
