March 23, 2026 Breakfast - Chicken and Rice Omelet. Lunch - Bagel with Gravad Lax, Dinner - Rice with Salmon, Scallops, Parsley, Watercress, and Sorrel
I made an omelet with chicken, onion, red cabbage, and rice for breakfast with a slice of toast.
Then I toasted two slices of bagel and spread them with goat cheese and garnished them with slices of red onion and gravad lax. I also bagged a bunch of green grapes and at 10:00 when Suzette came we drove to an appointment with my primary doctor. Then after the appointment at 12:00 Suzette drove me to my dialysis that lasted until 4:30.
Suzette then drove us home.
Dinner - we have run out of fresh vegetables and meat, so Suzette thawed a salmon filet and a handful of sea scallops. Then she went to our garden and picked a handful of sorrel and parsley. I picked through a bunch of watercress to separate the fresh small stems from their larger stems
She then sautéed the above ingredients with PPI rice into a delicious mixture that she served with glasses of recently received Red Newt Pinot Gris.
After this lovely meal we watched the Antiques Roadshow with sips of Germain-Robin Old Havana aged cognac and a square of Hawaiian dark chocolate.
At 9:00 we went to bed.
