March 22, 2026. Breakfast - Tuna ans Rice Omelet. Lunch - PPI Stuffed Cabbage Rolls. Dinner - Roast Pork Stroganoff with zucchini and asparagus

March 22, 2026. Breakfast - Tuna ans Rice Omelet. Lunch - PPI Stuffed Cabbage Rolls. Dinner - Roast Pork Stroganoff with zucchini and asparagus


My fourth day out of the hospital I am still in the dark canyon of recovery from a serious episode of my muscle condition.


My kidneys have not yet recovered and it is not clear if or when they will.


Likewise, my muscles are extremely weak. I can not sustain any level of exercise for long, including preparing my breakfast without sitting.


Having said that, progress is being made, For example, today I fixed breakfast. I thinly sliced two green onions and added the white portion to the last 1 1/2 cups of PPI Seared Aji tuna and rice and added two slices of ginger chopped and a clove of garlic minced.


I sautéed all those ingredients in peanut oil and sesame oil and then added a dash of Chinese Cooking wine and then three eggs whisked. I made a cup of green tea and sat as Suzette folded the eggs into an half moon omelet and served each of us half. 



We then took a tour of the garden and sat beside the fish pond for a few minutes. The wisteria kids in full bloom, giving the garden a heavenly aroma.




I then cut up a pineapple, a papaya, two oranges ,and three mangoes to make my tropical fruit salad until noon while Suzette cleaned the shed.


Suzette then heated up two PPI cabbage rolls in their lovely pimiento and tomato sauce to which we added sour cream for a tasty quick lunch. Willy came by to fetch his hiking boots for an afternoon hike in the Sandias and heated a cabbage roll and joined us for lunch.


I then rested and watched March Madness basketball, including the UT women pound a good University of Oregon team 100 points to 58 points in an impressive victory in which Texas’ center, Madison Booker, scored the Highest number of points scored in any game in this year’s tournament, 40  points.


Dinner - Pork Stroganoff 


At  5:30 we prepared dinner. I did major surgery on the remaining mushrooms to yield about two cups of sliced mushrooms while Suzette chopped asparagus and a zucchini and then sautéed those ingredients and added slices of roasted pork plus two T each of sour cream and grated Parmesan cheese and a dash of heavy cream and reduced that mixture slightly to make a creamy sauce and tossed it with German square boiled egg noodles.





It was a wonderful dish and one of my favorites and I ate a pasta bowl of it.


We then retired to bed around 8:00 and watched the PBS Masterpiece Theater production of the Forsyths.


Suzette then went to bed and I watched the TCU women win a squeaker past a very game University of Washington team to reach the Sweet Sixteen. I went to bed at 11:00.
