September 7, 2018 Lunch – Vietnamese Miso Noodle Soup. Dinner – Hamburgers with PPI stuffed Peppers and Sautéed Mushrooms

For breakfast I ate yogurt, milk, granola, and the last of Linda’s fruit salad.

For lunch I made a Vietnamese Miso Noodle Soup with Knorr chicken stock, a cube of pho flavoring, wheat, rice, and bean thread noodles, seaweed, 8 oz. of firm tofu, three leaves of Napa cabbage sliced, two mushrooms sliced, and a heaping T. of red (aka) Miso.  Even there was no meat, the soup was satisfying with lots of protein from the tofu and miso.  I ate two bowls.

At 2:30 I drove to Bosque Bakery and purchased a baguette.

I had snacks at 5:00.  I spread prepared taramasalata on pieces of Swedish Siljan’s hardbread (knaekebrod).

We planned to cook hamburgers with the PPI Hamburger meat Willy had prepared the other day.

When Suzette arrived around 6:15, she went through the fridge and threw out several items, but cheered in delight when she discovered a container with several PPI sweet peppers stuffed with sausage.

We decided to served the hamburgers with the sweet stuffed peppers and some sautéed mushrooms.

I sliced five white mushrooms, about 4 oz. of yellow onion, and a clove of garlic.  I melted three T. of butter and 1 T,. of olive oil in a medium skillet and added the garlic and onions.  After sautéing the onion and garlic for a few minutes I added the mushrooms and sautéed them while Suzette grilled the hamburgers and melted slices of fresh mozzarella cheese on them.  After a couple more minutes I added about ¼ cup of sherry and 1 T. of chopped parsley to the mushrooms.

When the hamburgers were cooked we poured the rest of the bottle of Melani Chianti into glasses and microwaved the stuffed sweet peppers in tomato sauce and plated our plates and took them with the glasses of wine to the garden and enjoyed an unexpectedly lovely dinner.  The light was golden and the wind was increasing and we could see an approaching thunderstorm so as soon as we finished eating we returned to the house.

After dinner I ate the last of the cobbler with vanilla ice cream, a cup of tea and a sip of cognac.  We went to bed at 9:30.
