November 4, 2024 Breakfast - Mackerel, Spinach, and onion Scramble. Lunch - PPI Vietnamese Lamb Noodle Soup. Dinner - Stir Fried Baby Bok Choy, Sugar Snap Peas, Mushrooms, onion, and Salmon with Rice
I woke up with lots of plans for work today but around 8:30 I received a call from my dentist’s office telling me they had an opening at 11:00 to complete the deep cleaning of the right side of my mouth.
So at 9:30 i minced onion, destemmed a pile of spinach leaves, and diced the last PPI baked Mackerel filet and sautéed the onion in butter, then added the Mackerel., and then the spinach. When those ingredients were warmed and cooked I added two eggs and scrambled them with the ingredients.
I drank water with the meal and then brewed a cup of green tea that I took in an ember heated cup to drink on my drive to the dentist.
When I arrived at 11:00 the procedure commenced and it was finished in about. 45 minutes. Half my face was deadened so I could not eat but I drove to Costco and bought eggs, a salmon filet, toilet paper and kitchen garbage bags.
I then stopped on the way home at Lowe’s and bought a gallon of milk.
Suzette called me soon after I arrived home at 12:30 to ask if she wanted me to pick up some food at Monroe’s where she was headed to buy a green chili cheese burger for lunch.
I told her I could not eat because my face was still deadened.
Suzette ate her burger and I watched the PL Fixture between Fulham and Brentford at 1:00.
I took Tylenol and watched the match. Brentford led Fulham 1 to 0 until added time when Fulham scored twice to win the match.
To say PL matches are unpredictable is an understatement.
Suzette took a nap after she finished lunch and I followed her to nap after the match at 3:00 and after I ate a lunch of the leftover PPI Vietnamese rice noodle soup with lots of fresh cilantro and Oriental basil, lime juice, and hoisin sauce.
I awakened at 4:30 and was still groggy talked to Luke for over 1/2 hours.
Suzette did not want to eat or cook dinner. I decided to Stir fry mushrooms, baby bok Choy, sugar snap peas, and salmon for dinner.
I minced three slices of fresh ginger and four cloves of garlic from our garden and minced about 3 oz. of onion and mixed a seasoning sauce combining, soy, oyster sauce, sherry, rice vinegar, corn starch and water. Then I sautéed the onion, ginger, and garlic in a heated wok with 2 T. of peanut oil. I then added the five sliced mushrooms and four or five baby bok Choy and stir. Fried those ingredients and added the seasoning sauce and more water to create enough liquid to partially cover the ingredients so they would stew in the sauce.
After a while I heated the PPI rice and brewed a cup of Chinese green tea and ate while we watched an Indian arts edition of the Antiques Roadshow as well as the Monday night Football game between The Chiefs and the Buccaneers. The game tied at 27 each and went to overtime in which Kansas City won to stay undefeated.
We then watched Kamala’s final rally in Philadelphia is and Suzette then went to bed. I stayed up until 10:30 and then went to bed to blog and read.
Everyone who is following the election news is on edge. This could be close and there is a lot on the line. Big money seems to run both campaigns rather than the politicians, which is in American, but it is the system we have and the citizens can still vote their conscience.
