November 1, 2021 Breakfast - Mackerel and Spinach Fried Rice. Lunch - Vietnamese Rice Noodles with Ground Lamb Dinner - Roast Duck with Braised Sweet and Sour Red Cabbage and baked Squash and Spinach
Today was a multicultural dining experience. Breakfast was Chinese, Lunch was Vietnamese, and Dinner was Czech.
At 8:30 I sautéed minced onions in a medium skillet. Then I added some PPI rice, then some PPI baked mackerel and then some spinach leaves. After that all heated up I added two eggs and scrambled all the ingredients together. It was delicious and kept me energized until lunch.
Lunch - Yesterday I went to Talin and bought fresh rice noodles, fresh mung bean sprouts, fresh basil, so today it was chilly and a perfect day for Vietnamese noodle soup. I put two quarts of water in a sauce pan and added a beef bouillon cube and a duck Vietnamese seasoning cube and two oz. of minced onion, a diced green onion, and about 1/3 lb. of chopped ground lamb. When this mixture began boiling I added a handful of Vietnamese rice noodles. In a minute or two the noodles were cooked and I filled a large bowl with soup and added fresh cilantro and basil and a generous squeeze of hoisin and a few drops of Srichara. The soup was delicious because it was permeated with the flavor of freshly cooked lamb.
I ate two bowls of it.
Then I went to Gobble This and signed the lease with Nestor for the apartment and got the rent and security deposit checks.
I then drove to the Post Office and finally home. I checked my portfolio and was happy for a small recovery from yesterday’s disaster. My portfolio increased by .5%. I rested but when I watched Mad Money I noticed that Nvidia had risen $7.00 in the after market. I checked the news and found out that Nvidia had replaced Intel on the Dow 30. When a stock is replaced the newly added stock typically gets a quick price boost as all the bid funds tied to the Dow buy it to include in their portfolios. If the increase holds through Monday I will make all the loss my portfolio suffered yesterday.
Suzette was hungry when she arrived so we decided to cook dinner.
Dinner - Again using prepared foods and PPIs made cooking dinner easy.
I sliced 1/2 head of red cabbage I bought for this duck dinner because we had eaten roast duck with red cabbage in Prague on a Sunday night. Roast duck and red cabbage is the Czech National dish for Sunday dinner.
Suzette also heated the remaining baked delicata squash and toasted a small handful of pinon nuts in a dry skillet and garnished the squash with the nuts. I also destemmed a small pile of spinach leaves. Suzette added apple cider vinegar and sugar and a little water to the cabbage to give it a sweet and sour flavor and give it a light sauce.
When the 1/2 duck was reheated in the oven at 350 degrees for twenty minutes I deboned it and sliced it and Suzette plated pasta bowls with a bed of spinach leaves and then red cabbage on one side and the baked squash on the other and slices of duck on the cabbage and toasted pinon nuts on the squash.
I opened a bottle of Vara Carignan produced in California that was slightly heavy and a deep purple color that went perfectly with the dinner.
After dinner we finish the bottle while we watched the news.
Women are voting in greater numbers than men in the swing states which is good news for Harris, even though the polls show a race too close to say either candidate has a statistically significant lead.
We started watching a film on the life of Martha Stewart on Netflix but got tired at 10:00 and went to bed.
I love the day of multicultural cuisine. Tomorrow it will likely be back to Middle Eastern pita sandwiches.
