February 20, 2024 Lunch - Salami Salad. Dinner - Prepared Lamb Shank with Tomato and garlic couscous
Another light day.
Again granola with milk, yogurt, and blueberries at 9:00 for breakfast.
At 11:30 I walked around the block, which enabled me to accumulate 2800 steps for the day.
Again a salad for lunch with romaine and red leaf lettuce, a diced tomato, 3 oz. of diced yellow onion, 1/4 cucumber peeled, seeded, and diced, feta cheese, and green olives with a toasted pita spread with labni.
Then at 8:20 Suzette microwaved a prepared lamb shank purchased at Costco and I made couscous with 1/2 tomato diced, a handful of stemmed snow peas, 1/2 shallot minced, 3 cloves of garlic minced 1 cup of couscous, and 2 cups of boiling water.
I sautéed the vegetables and then the cup of couscous in 3 T. of butter.
I then added 2 cups of boiling water and covered and cooked the couscous for 3 or 4 minutes then turned down the heat and let the couscous steam while Suzette heated the lamb shank in its plastic bag with pomegranate sauce in the microwave.
This quick and easy meal was delicious with a bottle of Cotes Du Rhone Villages red wine.
