February 17, 2024 Breakfast - Gravad Lax on toasted bagels with cream cheese and onion. Lunch - Red Snapper and shrimp tacos with guacamole.
We woke up around 8:30 and I watched several PL matches. The big match was between Chelsea and Man City which ended in a 1 to 1 tie, but Arsenal and Liverpool won to stay at the top of the League.
Bev had bought and toasted some mini bagels that everyone spread with cream cheese. I was daring added slices of onion and Gravad lax to the three halves I ate.
Suzette poured me a glass of fresh squeezed orange juice we bought at Citrus Point.
Then Bev and I made Bearnaise sauce
while Suzette and Don went to a large yard sale, where Suzette bought a garlic press and a bag of brownies that we ate on the plane ride back to and o a Mexican supermarket where they bought avocados, cilantro, and corn tortillas
At 1:00 Don cut the remaining red snapper filet into chunks and Suzette floured them and about 6 shrimp and sautéed them in mazola oil.
Suzette and I also made guacamole with the two small avocados, about 1/4 cup of diced onion, about 1/4 cup of minced fresh cilantro, garlic, and salt and Don diced a tomato.
Suzette heated the tortillas in the microwave in damp paper towels and fetched the Cole slaw from the fridge and we made our own tacos.
The fresh snapper made an elegant fish taco, firm yet not fishy in flavor.
I made mine with coke slaw, fish, and guacamole with tomato cubes on the side.
We drank Negra Modelos with lunch.
Then at 2:30 we packed and drove to the Sarasota airport and flew to Houston and from Houston to Albuquerque, arriving in Albuquerque at about 9:00 and arrived at home at 9:40.
It was really pleasant staying with Don and Bev. They were gracious hosts.
I enjoyed the cool breeze and mildly salty air at their subdivision and noted the extensive community of friends they have.
The flights were pleasant and we pre-boarded due to my bad hip.
