May 7, 2023 Brunch - Gravad Lax Omelet, Snack - Costco Hot Dog, Dinner - Grilled Rib Steak and Asparagus, Roasted Potatoes, Garlic, and Onions and Chocolate Cake.
Finally a relaxing day.
Suzette thawed three rib steaks
I watched the news until 10:00, then helped Suzette store the Christmas tree in the garage. Then she made a Gravad lax omelet with lax, red onion, and goat cheese that we ate with toasted baguette.
We then drove to Costco to buy provisions for dinner and Monday’s birthday party. We bought eggs, cream, beer, two bottles of Rose Sauvage, top soil, salmon filets, asparagus and mushrooms.
We ate a hot dog before driving home.
Suzette peeled and put seven or eight potatoes in a bowl of cold water. Then I diced the potatoes and quartered an onion and sliced the top off two garlic bulbs.
We then drove to Willy’s apartment and Billy and Mickey went downstairs to fetch drinks. Several of us drank orange flavored apple cider and Billy and Mickey drank whiskey. Willy grilled chicken skewers and served them Suzette roasted the potatoes, garlic, and onion at 350 degrees for 45 minutes and then removed the aluminum foil covering the roasting pan and roasted the potatoes another 15 minutes to brown them.
When we returned BIlly and I watched some of Glory with Matthew Broderick on the free movie channel until Willy and Mickey and Rebecca came at 7:00.
Then Suzette seasoned and grilled the three steaks and asparagus.
We then opened the three liter bottle of Chianti Classico. Billy thought it needed to be decanted and Willy and I decanted it.
Suzette removed the potatoes and Suzette brought in the steaks and covered them with aluminum foil to keep them warm.
We then warmed the pitcher of Béarnaise Sauce in the cooling stove to loosen it but not make it break apart.
In a few minutes I sliced the steaks. Miraculously, one was rare, one was medium, and one was medium rare.
Suzette put four asparagus on each plate and we each served ourselves scoops of roasted potatoes and garlic, and slices of steak.

The wine was rated 96 points so smooth as silk without any tightness.
Several people went back for seconds of potatoes and steak. It was a leisurely pleasant meal. I kept adding Béarnaise Sauce to steak and asparagus. I made the Béarnaise Sauce about two weeks ago when the perennial blooming of tarragon occurred, so it was fresh with a slight vinegary flavor, because I might have used a bit more white wine vinegar than usual, which I prefer.
After we all finished dinner Billy brought out the gluten free Happy Journeys Willy cake prepared by the Chocolate Maven in Santa Fe.
Willy is taking a two month sabbatical from work to travel to Bali to rest and then to Germany to visit a friend. He has accrued two months of vacation so will be paid during his vacation.
Willy cut slices of cake and we ate cake with sips of wine.
The cake tasted like a regular three tier birthday cake except had a very delicious raspberry coulis that had been emulsified with something that made it creamy.
After dessert Willy and Rebecca and Mickey left and Suzette, Elaine and Billy went to bed and I watched an episode of Marie Antonette.
I tried to sip some Calvados but only took a sip before I fell asleep in the chair and woke up at 11:30 and went to bed.
