December 3, 2017 Brunch – New Recipe  Sweet Potato , Pineapple, Shrimp and Goat Cheese Omelet. Dinner – PPI Turkey, Chard, and Lentil Soup

At 8:00 while watching the Sunday morning news programs I toasted ½ bagel and smeared cream cheese on it and garnished it with Gravad Lax and slices of red onion and drank a cup of green tea with it.

When Suzette joined me a bit after 9:00 she decided to convert the freezer bag of sweet potatoes and pineapple left from Thanksgiving in the fridge into a dish today.

New Recipe:  Shrimp, Pineapple, sweet potato and Goat Cheese Omelet

At 10:00 Suzette  sautéed the pineapple and sweet potatoes with shelled medium shrimp in a large skillet until thoroughly cooked and then added whipped eggs and when the eggs set she added slices of goat cheese and when the goat cheese melted a bit Suzette flipped one side onto the other to make an omelet.

Suzette made herself a Bloody Mary and I drank a glass of Clamato juice with mixed with the juice of ½ lime.

Today’s Brunch proves that you can make an omelet from anything.


After Brunch, at around 12:30 Suzette left for The Center for Ageless Living for the Annual Christmas decorating party and I took a nap until 1:45.  When I awoke I watched the crazy end of the Kansas City v. Jets game and then rode to Montano against an 8 mph head wind and then zoomed back home, pushed by that tail wind.

I rested in front of the TV watching an Olympic prep friendly match between Canada and the US women’s ice hockey teams, which Canada won in the first minute of overtime, while switching occasionally to the World championships for indoor bike racing on an inclined velodrome track.

Suzette returned around 4:30 and we decided to heat the PPI Turkey, Barley, and Chard Soup we had made with the PPI Thanksgiving Turkey.  I decided to heat the PPI pot stickers from Thursday night’s book club meeting and add them to my soup to make it a sort of weird turkey wonton soup.

This moment felt like the official end of Thanksgiving and the official beginning of Christmas. We were finishing our Thansgibving PPIs as we watched our first Christmas movie.

At 6:00 we watched the Hallmark movie that Melissa wrote and produced named “Christmas at Holly Lodge”.  Around 7:30 Willy came by to say hello and pick up his bike, so he watched a few minutes of it with us.

We watched a bit of the Seattle v. Philadelphia Sunday Night Football game, in which Philadelphia was exceedingly unlucky to fumble going into the end zone and gave up a touchdown and the ball and was unable to come back to win.

Our newspaper is being delivered regularly again.  This morning  Suzette informed me that tonight the moon will be a super moon, which means that it will closer to the earth than it will be again until in 2034. After the movie we went out to view the moon and it was impressively large and bright.

After a few after dinner drinks and a few chocolates, at 10:00 we went to bed.
