January 5, 2026. Breakfast - Granola. Lunch - Chirashi at Crazy Fish. Dinner - Enchiladas
I enjoyed the food today because it felt like I was back into my favorite routine.
For breakfast at around 10:00 I ate a bowl of granola with milk, yogurt, and blueberries.
I worked until 1:30 when Henry came and drove us to Crazy Fish on Central.
We each ordered Chirashi. The sushi chef knows which fish I like, salmon, Aji tuna, seared albacore tuna, escarole, and amber Jack or hamachi. The reason I like chirashi at Crazy Fish is that seaweed salad and squid salad is added to the bowl with the sushi rice and strands of daikon, both of which I like.
After lunch we returned home and Henry looked at re-bricking the garden with Suzette.
I checked my portfolio and something interesting happened that I can not explain, the DOW went up 595 points and the NASDAQ went up 160 points but my portfolio went down slightly, mainly because Apple, Nvidia, and AMD all went down.
I lay down at 4:15 and napped until Suzette awakened me at 5:15 to help cook dinner.
Dinner - A new recipe for enchiladas was on the menu. Suzette cooked a pot of black garbanzo beans from Rancho Gordo Bean Club with a mirepoix and chorizo yesterday. We decided to fill the 13 x 9 inch Pyrex baking dish with four layers of tortillas soaked in the Shed red chili sauce and three layers of ingredients: a layer of boiled chicken with requeson, a layer of sautéed mushrooms and onion with requeson and red chili, and finally a layer of the cooked black garbanzo beans. A layer of blue corn tortillas was laid on the oiled bottom of the dish, then one on top of the three layers and the top layer of tortillas was dusted with grated cojita cheese.
Suzette baked the enchiladas in a 350 degree oven for about 30 minutes.
We put sour cream on the table and Suzette fetched three Negra Modelos and Willy joined us for dinner.
We really liked this recipe and look forward to other Rancho Gordo beans to use as a layer in the future. It is a deliciou one dish meal.
After dinner we watched a new Antiques Roadshow episode from Salt Lake City and Willy reported that he had a 2% gain in his portfolio, which is a monster day for anyone.
The best news came at 9:45 when I received a response from my inquiry to an Indian broker to my request for help in dematerialization of my Indian bank shares.
They then called at 10:30 and we spoke and set up a teleconference call for tomorrow.
I then blogged this entry and went to bed at midnight as Suzette was talking to an employee.
