January 26, 2026 Breakfast - Granola with Tropical fruit salad bLunch - Mary and Tito’s. Dinner - Bean, Butternut Squash, and Pork Stew
I felt like today’s meals were healthy and not fattening.
I started the day with granola, fruit salad, Lala plain yogurt, and milk.
Then at noon I drove to El Super to shop for groceries. I bought limes, lemons, tomatoes, two Pasilla chilis, milk, chorizo, chicken thighs, zucchini, yellow squash, red onions, apples, two eggplants, broccoli, smoked pork chops, russet potatoes, leeks, two large avocados, and a head of green leaf lettuce.
I then drove to Mary and Tito’s and ordered my favorite dish, blue corn enchiladas, with double beans, extra onions, ground beef and an egg, and red chili.
It was served with a delicious warm flour tortilla that I enjoyed and took half of the dish home for lunch tomorrow.
I arrived at home around 2:45 and Suzette helped me unload the car.
I worked a bit at my desk and determined that my portfolio increased by .4%.
I napped until 4:30 and at 5:00 we began fixing dinner.
Suzette had cooked a pot of large brown beans she bought in Argentina and added the leftover pork and Butternut squash stew leftover from dinner several nights ago. Suzette served the bean stew with warm flour tortillas.
Flour tortillas are filling in a wonderful way, especially with a thick stew or saucy dish like chili. I loved them with both meals.
I drank a limeade with dinner.
Most of the beans were soft but some were not, so Suzette simmered the dish for another hour before placing the pot outside in our natural winter weather refrigerator, the back porch.
We watched Antiques Roadshow and then I watched a two hour history of Ireland and much of Rachel Maddow. It appears that demonstrations and the killing of a second person by ICE will finally force a change in Trump’s brutal immigration enforcement actions. K lobe char is running for Governor, one of the Republican candidates withdrew from the race, the President called Governor Walz and Mayor Frey to try to cooperate to reduce tensions, and the head DHS enforcement officer was removed from his position today. So democratic action of prolonged public peaceful protest has turned the tide, it seems. Especially, when the videos show that government officials are lying about what happened.
Then I blogged and went to bed at 11:30.
