January 23, 2026 Breakfast - Granola. Lunch - Vietnam 2000 Dinner - Lamb Kebabs, Leftover Stuffed Eggplant, and Tzatziki.
I woke up at 4:00 and from 4:30 to 7:15 organized my pleadings for filing.
After watching a positive market open I made a bowl of granola with tropical fruit salad, milk, and yogurt.
Then Suzette helped me file my pleadings. It took a lot of compression to file what must have been over 200 pages I relaxed but finally called the clerk in Las Cruces at 11:40 to see if they received all the papers and they had.
I was elated and ready to go to lunch shortly thereafter when Suzette said she was ready.
Suzette wanted the Vietnamese dish with flour sheets. I knew the only restaurant that served flour sheets was Vietnam 2000, so we drove there.
Suzette ordered her favorite, flour sheets over sautéed cucumber sticks and mung bean sprouts garnished with fried egg rolls and grilled shrimp served with a bowl of spicy fish sauce.
I was torn between egg noodles with wonton and a duck leg. I love duck so I ordered my favorite, duck leg Soup, No 76.
Suzette does not eat breakfast so she finished her dish but I could only eat 1/2 of my soup. So I took the rest home in a big 44 oz. plastic cup for breakfast or lunch tomorrow.
After lunch we drove to Innovage and then Kinney Brick where Suzette bought brick to repair the walkways in the French garden and create a bricked patio under the trampoline awning.
When we arrived at home I checked my portfolio and was pleased that my portfolio had regained all of the amount it lost several days ago when it crashed on the news that Trump wanted to invade Greenland. I rested and then took a short nap until 4:30 when Scott called to congratulate me on my pleadings . At 5:00 I went to the kitchen and Suzette helped me make chocolate chocolate chip and raisin cookies.
Dinner - We had decided to make lamb kebabs and eat them with the leftover Turkish stuffed eggplant. So we fetched the ground lamb from the freezer and Suzette thawed it in the microwave and added an egg, Za’atar, Alleppo chili, a minced shallot, and ground saltine crackers and formed about 15 mini meatloafs.
Za'atar is a versatile, aromatic, and savory Middle Eastern spice blend featuring earthy herbs, nutty toasted sesame seeds, and tangy sumac.
I started to make a Mediterranean salad of tomato, red onion, cucumber, and avocado but decided to convert it into tzatziki by adding juice of 1/2 lemon, two cloves of garlic pressed, a cup of yogurt, a dozen Kalamata olives cut in half, and a handful of fresh chopped mint.
Willy was at home, so he picked the mint and opened a bottle of Kirkland Malbec and poured glasses of wine and fetched a container he had bought with an orzo and olive salad, while I made tzatziki and Suzette sautéed the kebabs and heated pitas.
From a leftover stuffed eggplant we created a delicious Middle Eastern feast in about an hour with cookies for dessert.
