June 5, 2025 Breakfast - Latte Macchiato and Chocolate Croissant Lunch - Sushi from Whole Foods. Dinner - Broiled Scallops in a cream sauce with Greens and Carrots
I awakened around 7:15 and watched the Market open. Then I ate a chocolate Croissant with a Latte Macchiato.
Around 9:30 we drove to Debbie’s neighbor, Ellen’s house where we picked up sheets of glass with colored glass pasted onto the windows.
We all then walked to Debbie’s house and I talked to Linda about her move to Park City, Utah.
She showed me photos of their house in Summer and Winter and the views were lovely. She also told me that all their good fortune was due in large measure to her husband’s early acquisition of Nvidia stock. If she was accurate her owns. 240,000 shares, which would be worth approximately $33,600,000. I very smart and lucky fellow.
The market went down today, mainly due to a ugly divorce between Trump and Elon Musk in which Tesla stock dropped $57.00 which for Musk represented a $150 Billion loss if I heard the reports correctly. I did not check the market because it was down and I had two projects to complete and only 1/2 day to accomplish them because when we returned Loyda mentioned that the food in the refrigerator freezer was melting, so Loyda and Suzette emptied the freezer with a little help from me.
When I finally arrived at my desk I discovered that my computer was not printing. I called HP and had to engage a service tech firm affiliated with HP to fix it. It took 2 1/2 hours, but everything got fixed by 2:45. While the technicians were working on my computer Loyda let me finish the lovely assortment of fresh sushi she bought at Whole Foods this morning, an unexpected, wonderful lunch.
I loved it and need to find out more about Whole Foods sushi.
Rahim arrived at 2:45 and we edited his loan docs until 6:30 with a break while I filed my Motion to extend the period to file my docketing Statement in my latest appeal in the LRGA.
When I finished with Rahim’s edits, Suzette said we needed to eat the partial defrosted sea scallops for dinner. I suggested we heat the mushroom cream sauce and kale and chard from our garden from the pit roast. I Suggested we add the last of the spinach to enhance the greens.
Suzette broiled the scallops for about five minutes, basting them with tarragon butter. I heated the PPI rice and when the scallops were cooked I spooned a pile of rice into a pasta bowl and Suzette spooned the mushroom sauce with greens onto the rice and arranged five scallops on top of the greens. It was a wonderful dinner enhanced by glasses of the Austrian Gruner Vitliner white wine bought at Costco for around $10.00.
After dinner I made a cup of tea and we each heated two Swedish desserts.
After dinner and dessert I made tropical fruit salad by dicing a papaya, a pineapple, four mangos, three oranges, and the juice of two limes.
We now have lots of meats that. need to be eaten sitting in our fridge.
There will be lots of interesting dishes in the days to come.
