December 18, 2024 Breakfast - Sausage, mushroom, red onion, broccoli egg foo young, Lunch - Aji Tuna and Salmon sashimi with Sushi Rice. Dinner - Penne Pasta in a Chicken, mushroom, and onion Alfredo Sauce
I woke up at 6:30 and drank a cup of green tea and then rode 1.52 miles on the bike as I watched the stock market open?
At 8:30 I flipped the curing salmon to cure the other side and returned it to the refrigerator.
At 9:00 I made breakfast. I combined in the wok with two T. heated peanut oil, the leftover stir fried mushrooms and broccoli from last night’s meal and combined them with sautéed red onion and Jimmie Dean sausage and added a handful of baby arugula and two eggs stirred into the ingredients. l let the mixture cook until the egg became firm. Then I flipped the cake and cooked the other side. For a couple of minutes until it was firm. This was not the most appealing dish but it was more than edible.
After breakfast I returned to my desk and reviewed some documents for a real estate transaction. After that I put together my document and exhibits for the LRGA to file and reviewed the document one last time.
I reviewed documents for a real estate transaction and then ate sashimi for lunch,p. I cut up the ends pieces of salmon and the tuna steak and peeled, seeded amped sliced 1/3 of a cucumber for a simple sashimi lunch. I mixed wasabi and soy in a dipping bowl and put a small mound of pickled ginger in a bowl and heated a bowl of the sushi rice I made last night and made a cup of green tea and ate about half of the fish and froze the rest.
I then went back to work. This was the worst day in the market in a long time with the Dow down over 1100 points and the NASDAQ down over 750 points, so my strategy of the market turning down may be working again.
I talked to a referral about a corporate transaction and then filed the Response in the LRGA.
I stopped working after that and took a walk around the block and rested until Suzette came home.
Dinner - We decided to make Penne Pasta with Chicken and Asparagus with a Mushroom Alfredo sauce for dinner.
We used the Alfredo Sauce in a jar that Debbie gave us. I cut 1/2 of a chicken breast into large chunks. Suzette sliced some onion, garlic, and asparagus and I sliced five or six medium portobello mushrooms.
Suzette started boiling the penne. Then she sautéed the onions and garlic and added the sliced mushrooms and then added the sliced asparagus and finally added the chicken. Then added the 1/2 jar of Alfredo sauce and one ladle of the pasta water and mixed all those ingredients and finally added some chopped parsley.
I fetched a bottle of La Granja Viura and Verdejo blend (Trader Joe’s), opened it and poured glasses of it. It is one of my favorite cheap wines with chicken dishes.
After dinner Suzette watched a Christmas movie and I went to bed.
