December 16, 2024 Breakfast - Croissant with jam Lunch - Thai Spice

Dinner - Roasted Chicken with Spanish Potatoes, and green beans sautéed with almond slivers.


Another early morning rise but I went back to sleep after an hour and slept until 7:45. I dressed in shorts because I had appointments with both my primary, Dr. Bungo and my dermatologist.  I ate the last croissant spread with butter and then heated in the microwave and then spread with French Cherry preserves with a cup of green tea. I felt like I was in France.





At 10:10 I drove to my doctor’s appointment at 11:00.


When I finished around 11:45 I drove to Lime for lunch but it was closed.


My dermatology appointment was at 1:30 so I had time to drive to Paseo and Louisiana to eat at Thai Spice.


When I was seated, my waiter turned out to be Nok, one of my old clients.


I had trouble deciding and finally ordered my favorite, a Massaman curry lunch. The curry was served in a bowl with a cup of rice, two vegetarian egg rolls, a cup of awful egg drop soup before the entree and a small bowl of tapioca pudding with sweet milk after the meal.




I then drove to my 1:30 dermatology appointment and afterward at 2:30, I drove to Smith’s where I bought the last 16 lb. slab of bone in rib steaks for $4.97/lb., two salmon fillets weighing a total of five lb.s at $9.99/lb., a tuna steak, two small 1 oz. containers of dill weed, and a whole chicken for a total price of $150.00.


When I arrived home at 3:30 Suzette was there and helped me unload the car and put the steaks in the fridge.


I then drove to Bill Turner’s to discuss a new case until 5:30.


While I was gone Suzette prepared the chicken for dinner. She pushed  lemon slices and garlic under the skin and rubbed it with butter and stuffed the stomach cavity with rosemary and roasted the chicken at 400 degrees for 20 minutes and then reduced the oven temperature to 350 degrees and cooked it for 1 1/2 hours. 

When I returned home I snapped about 1/4 lb. of green beans that Suzette blanched in a skillet and when the water evaporated then sautéed the green beans with olive oil and almond slivers until the almond slivers turned golden brown.






She also re-heated the leftover Spanish Potatoes from our Sunday dinner and I opened a bottle of Gruet 2018 Chenin Blanc that was at the end of its full flavor profile and was starting to darken in color and tasted fine but with a hint of sherry.


Dinner was wonderful. The roasted chicken was cooked to perfection with a crisp browned skin. I loved filling my fork with chicken, toasted almonds, and green beans. The potatoes were even better than Sunday night because they had cooked longer and were softer and had absorbed more of the flavor of the sauce.


After dinner we watched football and went to bed before 9:00.
