March 8, 2016 Lunch- PPI Pork Confit Goulash stroganoff with steamed broccoli, Dinner – marinated Salmon cooked in foil and Fried Rice

Today the weather was forecast to worsen into a winter storm so I rode to Montano at 10:00 and showered and then fixed lunch by re-heating a container of PPI Pork Confit Goulash Stroganoff from last week and PPI steamed broccoli from last night.

We had thawed out pieces of Coho and Atlantic salmon, so Willy could make a dish he likes to make, so at 6:00 Willy determined that he needed fresh ginger and went to Lowe’s to get some.  When he returned he started cooking by making a marinating the salmon in sesame oil, soy, and  chopped ginger.  While the fish was marinating, I chopped 1/3 pasilla chili, a yellow bell pepper, a small red bell pepper, 1/3 onion, a handful of cilantro, and about eight Epazote leaves.

I made a cup of rice and we also snacked on cheese and toasted bread and pretzels dipped in PPI mustard Louis Sauce from last night. 

After about ½ hour of marinating Willy and Suzette transferred the fish filets to aluminum foil,  garnished them with the extra ingredients I had chopped, sealed the aluminum filled pouches, and baked the pouches in a 350 degree oven for thirty minutes,  

While the pouches were baking, Willy made fried rice by frying an egg and chopping it into pieces and then stir frying the boiled rice with sesame oil, soy, peas, and the egg to make fried rice.

When the salmon had cooked for ½ hour Willy plated the pouches and fried rice.  We opened our pouches and dumped the fish and baked ingredients onto the fried rice and enjoyed our dinner.  The coho salmon was much drier than the Atlantic farm raised salmon, but both were drier than fresh, probably due to their being frozen.  I guess we should have poached the fish with the marinade as a flavoring for the poaching medium.

After dinner I ate some PPI pound cake and whipped cream and vanilla ice cream and strawberries drizzled with Grand Marnier and Hershey’s chocolate sauce.

We watched the election returns from Mississippi and Michigan and went to bed at 10:30.
