June 24, 2025 Lunch - Costco Hot Dog Dinner - PPI Casarecce Pasta with Steak, Butternut Squash, and Mushrooms
June 25, 2025 Breakfast - Fried Salami, Mushrooms, and Green Onions with fried Eggs Lunch - PPI Pad Thai. Dinner - Teriyaki Grilled Salmon with Rice, and Shredded Brussels sprouts with pinon nuts.
June 24: I ate a quick breakfast of Chocolate Croissant and Latte Macchiato and drove to an appointment at Eye Associates, after which I drove to Costco to shop. I bought lamb chops, eggs, flour tortillas, seven bottles of wine including two good ones, a Haut Smith Lafitte and a Cune Gran Reserva Rioja, plus two cotes de Provence Rose’s, a Napa Cabernet Sauvignon, a Spanish Priorat and one other, more lemon covered almonds, butter, and Corn Dogs.
I then ate a hot dog with relish, catsup, and mustard with a drink that was the best meal of the day.
I then went home and made teriyaki sauce with 1/2 cup each f soy, mirin, and sake plus a T. of sugar cooked until the sugar dissolves. I then cut the 3 lb. salmon filet into two pieces and froze the smaller piece and put the larger piece in a gallon freezer bag with the teriyaki to marinate in the fridge. Then I worked until 4:00 when I watched Ari and the news.
Dinner - we decided to eat the leftover Pasta tossed with steak, butternut squash, peas and cubed cucumber and tomatoes and mushrooms. Suzette sautéed it in butter and olive oil that she likes to do. It was delicious.
We opened a bottle of JME Sellicion Rioja Reserva.
June 25 - I went to have a vascular ultrasound at 7:45.
When I returned home I fried four slices of salami and a mushroom, and two eggs garnished with green onions sliced thinly. With two slices of toasted Baguette. It was a hearty breakfast at 10:00.
I did not eat until I finished Rahim’s loan documents at 3:30.
I was hungry, so I decided to heat the last of the Pad Thai. It was still delicious, especially with thinly sliced green onion ringlets, minced cilantro, and lime juice.
I meditated at 4:30 and then made rice with dashi and seaweed for dinner. Suzette cut and soaked a cedar board. Then she cut the tough ends off Brussels Sprouts and shredded them in the Cuisinart and sautéed them with olive oil and pinon nuts.
Then Suzette grilled the salmon. She let the fire build around the bosrd that gave the salmon toasted darkened crisp edges. Suzette cooked the salmon so that there was a fry small seared center that left the salmon
Suzette plated a thick slice of salmon on piles of Brussels Sprouts and rice.
I fetched a bottle of sake and poured glasses of it chilled with ice cubes.
This was a lovely dinner and we will have a lot of salmon for another meal.
After dinner we watched River Plata play Inter Milan in a Team World Cup match. The Argentines lost a man to a red card and Inter won 1 to 0.
Suzette went to bed at 10:00 and I stayed up to blog this entry. With a cup of Earl Grey tea and a cookie.
Bythe way the last two days have been good days in the market. Today Nvidia went up over $6.00 and Apple went up $1.26. Most everything else went down, but my portfolio on the strength of those two stocks went up 1.6%
More interestingly we talked to Willy this morning and he has lived on the gains on his stocks for the last year abroad. He is a phenomenal stock picker.
