December 28, 2024 Lunch - Beef Stroganoff with cassarecce noodles Dinner - Tom Yum Gai. 


I ate the last two pieces of blue corn griddle cakes for breakfast and then listened to a one hour CLE lecture.


We talked a bit and Suzette suggested Beef Stroganoff with noodles for lunch.  I slices the two large mushrooms, a shallot, and about 1 lb. of the rib roast and Suzette sautéed the shallot and mushrooms while a pot of cassarecce pasta was boiling. When the shallot and mushrooms were cooked she added the PPI mushroom sauce from dinner two nights ago and finally the chunks of roast beef.


She lay a bed of baby spinach in a pasta bowl and then noodles on top and finally the stroganoff on top of the pasta. We drank a Kirkland New Zealand Sauvignon Blanc with the meal for a lovely lunch that we intended to be the large meal of the day.

I watched Bowl games starting at 12:15 when TCU demolished Louisiana.


Then the best game of the day was Iowa State v. Miami that through proper clock management Iowa State won 42 to 41.


At 5:30 we decided to use the chicken stock we made to make Tom Yum Gai for which we lacked only lemon grass. We did not have Thai chilis but we did not want to use them anyway.


I heated the chicken stock and removed the meat from the carcass and the celery and onions. Suzette found a recipe and we added a can of coconut milk, juice of a lime, 2 tsp. of sugar and 2 tsp. of curry powder that was spicy, 1 to 2 T. of fish sauce, and a tomato and 1/2 onion sliced into thin long slices.


The result was surprisingly delicious.




Then we watched BYU crush Colorado in the Alamo Bowl during which we ate the last two pieces of the chocolate dessert with creme anglais.


We went to bed at 9:30, I to blog and Suzette to sleep.


We are into the heart of the bowl games and I am loving it.


I did ride 1 1/2 miles on the therapeutic bike for a total of 2400 steps today, consistent with sitting and watching football.
