December 29, 2024 Brunch - Lax omelet. Lunch - Roast Beef sandwiches Dinner - PPI Pasta with Roast Beef and Mushroom Cream Sauce


I spent most of the day in front of the TV with one important exception.


I watched Nottingham Forest beat Everton 2 to 0 to go into 2nd place in the premier League. Then I watched Liverpool beat West Ham 5 to 0 to stay 8 points ahead of Nottingham Forest and further from everyone else in the PL standings.  Mo Salah scored a goal and two assists to solidify his lead in both categories.


I also watched the Cowboys lose to the Eagles.


At 9:30 o made an omelet for brunch. I sautéed onion brown and red onions and then whisked and poured three eggs into the skillet and then lay a layer of goat cheese crumbles on top of the eggs and then a layer of spinach leaves and finally chunks of Gravad lax on one side on top of the spinach.  Then I flipped the 1/2 where there were not lax chunks onto the chunks side of the omelet and cooked it for several minutes. Suzette sliced an avocado and we garnished the top of each half of the omelet with avocado slices. I made a cup of green tea and heated a chocolate croissant to eat with my half of the omelet, Suzette made her usual Sunday morning Bloody Mary.



We watched the games until 2:00 and then drove to Tingley Beach and walked to the two ponds where we saw many ducks.


We then drove to El Super and shopped for produce, including celery, zucchini, red and brown onions, lemons, carrots, orange juice, green beans, mushrooms, black beans, vinegar, and yogurt.


We drove home and unloaded and started watching NFL football again, this time Green Bay against Minnesota.


Suzette heated up some of theh cassarecce pasta with chunks of roasted beef in a mushroom sauce that we ate with glasses of the wonderful Preto Red Mercia we bought at a small winery in Portugal on our trip last year to Spain and Portugal. We loved the soft flavorful Mencia red. 





After dinner I ate a few slices of dark chocolate Terry’s apple with cognac for a Discutif.


We then watched 60 Minutes with coverage of Nvidia and the reconstruction of Notre Dame and finally the best game of the day, Washington v. Atlanta that Washington won in overtime.


We went to bed at 9:30
