December 23, 2024 Breakfast - Lax and Cream cheese on French Baguette. Lunch - Pad Thai with roasted Duck. Dinner - SpanishBaked Cod with Potatoes, Sautéed Onions, and tomatoes with a mixed greens salad.

December 23, 2024 Breakfast - Lax and Cream cheese on French Baguette. Lunch - Pad Thai with roasted Duck. Dinner - SpanishBaked Cod with Potatoes, Sautéed Onions, and tomatoes with a mixed greens salad.


Today was busy. In the morning I toasted three slices of French baguette and spread them with cream cheese and garnished them with slices of red onion, and gravad lax and finally capers.




I worked until 1:30 when Suzette heated up the leftover Pad Thai she bought at Thai House near UNM and added the leftover duck from last night’s dinner. It was really delicious.


Afterwards at 2:05 I checked my portfolio and I had a monster day with an increase of over 1.6%. Stocks were mixed but Nvda was up almost $5.00 and Meta was up $14.60, which accounted for most of the gain


Then, Suzette and I took a short nap and at 3:00 drove to Smith’s to do some last minute shopping for the cheese fondue party tomorrow night. The store was incredibly crowded with people shopping for their Christmas meal.


I bought Fontina cheese, broccoli, Bartlett pears, lettuce, red seedless. grapes, salami, a loaf of 9 grain bred, pretzel sticks, and a bottle of tonic water.


When I finished shopping it was 3:45 and Luke was scheduled to arrive at 4:00 so I drove to the airport and picked Luke up.


When we arrived home, Luke was hungry and ate some leftover Carne Adovado and Suzette and I ate braunschweiger on a slice of the 9 grain bread with a slice of cheddar cheese.




Soon Bill and Elaine arrived. I sliced a large onion into thin slices and five potatoes Into thicker slices.


Suzette took it from there, boiling the potato slices and sautéing the onions and chopping the tomatoes. She assembled the dish in a large French copper baking dish added saffron, cod fillets, pimeton, and a cup of water and baked it in the oven for 30 minutes.






At 6:00 Bill and Elaine arrived and Elaine made a lovely salad with tomatoes, Romaine and baby spinach leaves and dressed it with an olive oil and the patron vinegar we bought in Portugal.



I opened the bottle of Mar de Frates Godella. It was amazing. We liked it better than the Albariño.







We talked a bit after dinner. And then when everyone left we watched “ELF” and laughed ourselves to bed at 10:30.
