April 14, 2024 Breakfast - Gravad lax on toasted bagels Lunch - Leftover enchiladas with beans, rice and an egg Dinner - Grilled rib steak with pasta mixed with three types of sautéed mushrooms and cucumber salad
Another day of exceptional food and the defeat of another top ranked PL team.
Today all the favorite top ranked teams lost; Arsenal, Liverpool, and West Ham, leaving Mac City three points clear atop the PL. they were sad to see, but interesting matches.
At 8:00. I toasted two slices of a Kaufman’s bagel and laid slices of Gravad lax on the toasted bagels plus cream cheese, sliced onion, and capers.
At 9:30 Suzette went to an auction and returned around noon and heated up our leftovers from lunch at Padilla’s yesterday and added eggs to poach. We drank Negra Modelos with lunch and ate on the patio so we could see and smell the fragrance of the blooming wisteria bush.
After lunch we moved the planter from the driveway to the back yard beside our new Japanese maple. We intend to plant a Japanese pine tree in the planter.
In the morning Suzette planted herbs in one half of one of the raised beds and the herb plants we bought at the farmers’ market yesterday.
At 3:00 Suzette went to the Museum for the closing reception. I read a review of Retired Justice Baeyer’s new book criticizing the conservative decisions by Supreme Court. It seems they have invented new terms like Originalism and textual is to hide their political agenda, which is to overturn long standing precedents established by the Warren Court.
I then watched Scottie Scheffler win the Masters. I was proud that he was a UT graduate and helped UT win the Big 12 championship three years in a row. He played an amazing round of golf of Sunday to win.
At 5:00 I walked around the block for the first since the operation on my way to logging 2335 steps today. It was a beautiful walk with many yards in full bloom.
At 6:00 I started making cucumber salad for our steak dinner. I peeled and seeded a cucumber and sliced it into thin slices. I then added 1 1/2 tsp. each of salt and sugar and minced 1/3 onion and about 1/3 of a shallot and finally stirred in 2 T. of red wine vinegar and chilled the salad.
Suzette chopped and sautéed a medley of blue oyster, portobello, and white mushrooms with 2/3 of a shallot and 3 cloves of garlic minced in olive oil and butter and then tossed the mushrooms with some the PPI spaghetti from last night’s dinner. Suzette salted and peppered the steak and put it on the grill and I pulled the steak from the grill and sliced it. It turned out to be closer to medium than medium rare, but its confirmation and marbling was perfect.
I opened a bottle of 2016 De Ponte Dundee Hills Pinot Noir that was smooth as silk with dinner.
This turned out to be an exceptionally delicious meal.
After dinner in ate yogurt laced with drops of honey As we watched Two Masterpiece Theater episodes on PBS.
We went to bed at 10:30 and Suzette at 10:00.
