I toasted bagels for Barry and me for breakfast. I smeared them with cream cheese and lay slices of Lax on them and sprinkled them with capers.
We left at 10:15 for Las Vegas by way of Talpa, Tres Ritos, Cleveland, and Mora on Highway 518.
We stopped inMora at Hatcha’s for lunch because we wanted some New Mexican food. I ordered a chili Relleno and shedded pork enchilada with pinto beans and red chili. Suzette ordered shredded pork tacos. The red chili was good but hot, so I ordered a coke, onions, and sour cream to help digest the chili. The red chili had a creamy consistency. When I asked the chef if he used flour, he said, “Yes.”
Suzette tacos were served in burned cheese tortillas. Corn tortillas that had been sautéed in a skillet with cheese until the cheese stuck onto the tortilla and darkened. We loved our lunches and then drove on to the State Hospital in Las Vegas, where Suzette interviewed a prospective client.
As soon as we were on the road back to Albuquerque, Suzette said, “Let’s stop at Stephen’s Consignment.” When we arrived at Stephen’s Consignment, Suzette soon found a large exotic Huichol string painting and bought it for $130.00 after a bit of haggling; a fabulous purchase.
We were thrilled as we drove home and arrived at 4:45, so we saw almost all of Super Bowl Lii, the best football game I have seen in a while and probably one of the best Superbowls ever played.
We finally ate the chicken salad I made on Thursday. Suzette simply put chicken salad on stalks of Romaine lettuce, while I made a salad with lettuce, diced tomatoes and cucumber, a thin slices of red onion plus a little olive oil and lemon juice.
We went to bed at 9:00.
