November 2, 2025 Breakfast - Gravad Lax on Bagel Lunch - Cobb Salad at Two Fools Tavern. Dinner - Mapo Dofu and Stir Fried Bok Choy and Rice

November 2, 2025 Breakfast - Gravad Lax on Bagel Lunch - Cobb Salad at Two Fools Tavern. Dinner - Mapo Dofu and Stir Fried Bok Choy and Rice


I woke up at 7:00 and made a list of numbers that might be needed during our absence. I then dressed and at 8:15 joined the teleconference between Luke and Suzette regarding the remodeling of his kitchen and bathroom. During the call around 9:00 I toasted three 1/4  thick slices of bagel, and spread them with cream cheese and avocado and garnished them with slices of red onion, Gravad lax, and capers.


 When the call ended at 9:30 I worked until 12:30 when I ate the last cup of the poached salmon in linguine cream sauce and then we drove to Two Fools Tavern to hear David and Nickelle play Gaelic music. We ordered beers and perused the menu. I decided to order a large Cobb Salad. The music and salad were wonderful.




We left around 1:30 and drove to Savers at Renaissance and then Home Depot.


Then we drove home and I rested until 4:30 and then destemmed the rest of the oregano. Suzette had destemmed the lemon thyme and mixed and filled jars of Herbs de Valencia, a mixture of lavender, thyme, tarragon, and oregano from our garden.


I then chopped four baby bok Choy and separated the white stalk pieces from the green leaves and added ginger garlic, white onion and a shallot to the white pieces.


I then stir fried the heavier white ingredients for about ten minutes until they started to soften and then added the green leaves and stir fried them for a couple of minutes. Then I added a seasoning of rice cooking wine, sesame oil, and corn starch mixed with about 1/2 cup of water and the leftover stir fried baby bok Choy from yesterday’s dinner and mixed everything together. The sauce did not coagulate today. 



Suzette then plated PPI rice and Mapo Dofu and heated each plate in the microwave. I turned the baby bok Choy to low and spooned some around the Mapo Dofu.


The two dishes were great together. We shared a Negra Modelo.




At 6:00 we watched a new episode of Miss Fisher. Then at 7:00 I watched Seattle crush Washington DC in the first half. I turned off the TV until 8:00 when I watched Maigret, Gold, and Patience until 11:00 and blogged and drank green tea.  


Suzette went to bed at 8:00.


My niece, Rebecca, gave birth to a baby boy today. Billy and Elaine went to NYC yesterday, so they were present for the birth of their grandson. Congratulations.
