January 7, 2015 Lunch – PPI salad, Dinner – PPI Pasta with Mushrooms, and spinach  and a sautéed  smoked pork chop

I ate the PPI salad from last night’s dinner for lunch. It was a little wet but tasting and much of the lettuce was still crisp.

I planned nothing for dinner, so when Suzette came home she perused the fridge and came up with a menu of a sautéed smoked pork chop (Ranch Market $3.49/lb.) and sautéed pasta.  I asked her to make a cream sauce and add spinach and onions and Suzette replied, “We have a PPI container of Béchamel sauce made with lobster stock.”

So I chopped 1/3 onion and a couple of cloves of garlic and a couple of mushrooms and fetched the Béchamel. Suzette fetched the Spinach and sautéed the onion and garlic and mushrooms and then added the PPI egg noodles and then the spinach for one of those all in one dishes.  In a separate cast iron skillet Suzette sautéed two smoked pork chops.  I poured out the rest of an open bottle of 2010 Nessa Spanish Albariño and grated Pecorino Romano cheese on the top of the pasta and fetched the cranberry sauce.

Another impromptu quick and delicious meal.
