February 7, 2016 Brunch – Oatmeal, Super Bowl Party at Susan and Charlie’s
We watched the news shows and then I made oatmeal with chopped walnuts, raisins and a diced fresh apple and a touch of cinnamon.
We were invited to the Palmer's to watch the Super Bowl with their friends from Moab, Utah, Rick and Sherry.
We decided to make vegetables and a dip. I rode the the nature center at Candelaria into a stiff headwind and came home really fast. Again while I was showering Suzette made the dip with cream cheese, Boursin and a little sour cream and a small spoon of herbed salt. We de-threaded about 1 pound of sugar snap peas, which Suzette blanched in the new steamer oven, while I peeled and sliced carrot sticks and rounds of cucumber. I also made guacamole with three medium avocados, about 2-3 T. of onion finely minced, three cloves of garlic, about ¼ cup of fresh cilantro, juice of 1 lime and about 1 T. of fresh minced Pasilla chile.
We arrived about 4:15 to find that Susan and Sherry had done some major shopping. There was a cheese board with geteost, cheddar, Comte, and several other cheeses plus a Boursin and a Chaurcote. Then there was Cole slaw, potato salad, pulled pork, rolls, red onion, and dill pickle slices, bean dip, Queso from Monroe’s, salsa from Monroe’s lots of types of chips, including Fritos for the bean dip., which took me back to my youth in Texas.
Soon Susan put out slices of cheese cake, also.
Sherry made margaritas. We drank a margarita then switched to beer to wash down all the food. We nibbled and watched the game until 8:45, when we walked back home to watch Downton Abbey. Denver won the Super Bowl with its fabulous defense.
