Our second day of Suzette’s new diet and we are,
amazingly, still on it. We had PPI
Calamari and Seaweed salad in the fridge that we had bought at Costco last
Saturday for $10.99 each that needed to be eaten and we had a tub of fresh mozzarella
from Old Windmill Dairy that we had bought at the Farmers’ Market last Saturday
that was starting to disintegrate and needed to be eaten, so we decided to make
salad plates for dinner.
We went to the garden and picked a handful of basil
and the few tomatoes that appeared to be ready to eat.
I mixed a small bowl of red Kirtland Balsamic vinegar
with some Kirtland Virgin Olive Oil.
Suzette sliced the tomatoes and arranged them on a plate with slices of
mozzarella and the basil leaves and piles of Calamari and Seaweed salad and I
dressed the caprese salad with the simple balsamic dressing that was not sour
but had a slight sweetness to it and voila, we had a light low calorie dinner.
