January 4,  2021 Lunch – PPI Chicken Curry with Rice. Dinner – Garlic Eggplant with Rice 

There was a big sell-off in the market. It is always hard      to tell whether this is a short term correction or the beginning of a larger down trend.  Anyway when Air BNB went $5.00 below its issue price I bought 150 shares.  Unfortunately it kept dropping so I bought another 100 shares when it had dropped $7.00 from which point it began to stabilize ending the day just above the $7.00 low.

My thought is that Air BNB has long term potential because it has and will revolutionize the real estate market.

At 8:30 I toasted two slices of a plain bagel, spread them with cream cheese and garnished them with slices of red onion, Gravad Lax, and capers.At 1:30 I heated chicken curry and rice and ate them with the addition of the five vegetable pickle (salty and sour) and mango chutney (sweet and spicy).

 



At 4:00 I rode five miles south on my bike.

For dinner we decided to use the three beautiful ichiban Chinese eggplants to make Garlic Eggplant Fromm Mastering the Art of Chinese Cooking. Here is the recipe.


I cut the eggplants into 2 to 3 inch strips and the I cut the ½ lb. of PPI grilled rib steak and minced ten small cloves of garlic, 1/4 red bell pepper, and 1/3 of a medium onion . 

 Suzette made a seasoning sauce that included soy sauce, oyster sauce, Chinese Cooking wine, rice vinegar, and cornstarch.

I then made 1 ½ cups of long grain rice by bringing 3 cups of water seasoned with 1 tsp. of Knorr dehydrated chicken stock to a boil and adding 1 ½ cups of rice and a green onion sliced thinly and simmering the covered pot for 30 minutes at the lowest heat.

Suzette fried the eggplant sticks in peanut oil and the cooked the other vegetables and beef with 1/2 tsp.  of Garlic chili paste and then added back the drained eggplant and then added the seasoning, which she cooked for a few minutes until the sauce thickened a bit.  We served the eggplant on a pile of freshly cooked rice.

We drank beers with dinner.

Later we ate some ice cream with Hershey’s chocolate syrup.
