January 11, 2021 Lunch – Chicken Miso Noodle Soup. Dinner – Pork Chops Sautéed with onion and apple with sautéed Roasted Butternut Squash and Steamed Broccoli

 January 11, 2021 Lunch – Chicken Miso Noodle Soup. Dinner – Pork Chops Sautéed with onion and apple with sautéed Roasted Butternut Squash and Steamed Broccoli  

Thank God for the joys of Fresh food ingredients.  We bought a package with about a dozen thick pork chops last Friday at Costco and on Sunday we ordered 12 items from Sprouts, including the butternut squash and broccoli we cooked tonight.

I suzette picked the two best chops and I wrapped the rest in Saran and froze them.  We had roasted the butternut squash on Sunday, so today Suzette only had to peel it and sauté it in butter with some fresh rosemary from the garden.

Suzette sliced a granny Smith apple and an  onion and sautéed them with some rosemary and then removed them from the pan and sautéed the pork chops and combined them at the end.  She also steamed some of the lovely broccoli we received and I chilled a bottle of Le Ferme Julien rose produced by the Perrin family in the Southern Rhone region of France. It is 50% Syrah and 50% Grenache and costs $5.99at Trader Joe’s, which makes it one of the most drinkable inexpensive roses.

For lunch I made Miso Chicken Noodle Soup.  I seasoned about 2 quarts of water witstock and added the baked PPI Chicken thigh from last night’s dinner plus about 3 oz. of sliced onion, a stalk of celery, about 1 tsp of dried Pulse seaweed, about 4 oz. of medium firm tofu, 2 T. of red miso, three leaves of Napa cabbage sliced, four types of noodles (bean thread, 40 mm. Rice sheets, brown rice vermicelli, and a bundle of wheat noodles), 4 white mushrooms sliced, Chinese Rice wine, sesame oil, and six green beans cut into 1 inch segments.  I simmered the soup about 30 minutes until all the ingredients were cooked and seasoned the soup with hoisin sauce and garnished it with thin slices of green onion. 

  My big activity of the day was to go to the post office to pay my 2020 federal and state income taxes and pick up a certified letter.  I also took a walk to Kit Carson Park and back at 4:00.


 I love it when cooking becomes easy when you have excellent ingredients.
