December 3, 2020 Lunch – PPI Turkey Pot Pie and PPI Penne Pasta with sweet Italian sausage, bell peppers, tomatoes, and chicken in a heavy cream sauce Dinner – Thanksgiving Dinner Redux
Some days you can not create anything from what you have so you eat the PPIs you have. This was one of those days. I awakened a bit after 7:00 and worked a bit and then showered and dressed and made my usual breakfast of granola, milk, banana slices, blueberries, and Greek yogurt.
Aaron arrived at 8:45 and we mediated from 9:00 until about 10:45 and were able to settle his case on a basis he found acceptable.
I then worked until 1:00 and theN heated the leftover PPI Turkey Pot Pie and PPI Penne Pasta with sweet Italian sausage, bell peppers, tomatoes, and chicken in a heavy cream sauce. There was nothing elegant about it, but it was more than filling.
The same must be admitted about dinner although there was a bit more effort put into the meal by Suzette. We decided to eat some of the remains of Thanksgiving Dinner, namely the turkey dark meat, some of the dressing, the cranberry sauce, and the roasted beets and sweet potatoes. Suzette fetched the turkey stock we had made from the turkey carcass. She then made a roux by cooking flour and butter for three minutes. She the added enough turkey stock to the roux to made a creamy sauce. Then she added the cup of dark meat turkey and about an equal amount of dressing and stirred those ingredients together to heat them and coat the dressing and turkey with sauce.
She heated the container of roasted beets and sweet potatoes in the microwave and I put the cranberry sauce on the table.
I opened and poured glasses of Touch Cotes Du Gascogne white.
So in pretty short order we had all the Main dishes from Thanksgiving with a slight twist, a combination of dressing, turkey, and sauce combined into one sautéed sauced dish and re-heated vegetables for a two dish PPI dinner.
I was uncomfortably full of carbs but will get over it.
I ate one Belgium chocolate and a sip of Calvados after dinner as we watched Jake Taper interview Biden and Harris.
Suzette went to bed at 9:00 and I went to bed at 11:00 after blogging this blog.
Another middling day in the market with a meager .25% increase in my portfolio to a new high, thanks mainly to Moderna. Most of the big tech stocks I own were down today, because there was a rotation out of them near the end of the day.
I also sold 80 shares of Apple at $122.26/share a couple of days ago for a Christmas money, such as paying taxes, paying for the Nordfeldt painting and my 1/2 of the travel van remodel Suzette and I are giving each other for Christmas. Today the three day settlement period ended and so I ordered the withdrawal of the money from my brokerage account.
