Another busy day. I made an omelet Florentine by heating the PPI beef and potato omelet on a mound of spinach.
I then attended the day long Business Law Seminar at the Bar Center.
We were served lunch boxes with a sandwich, chips and a cookie.
I removed the top layer of bread and ate the turkey and cheese on the bottom half of the baguette, a couple of chips (fried Potato chips) and the cookie with water.
I ate a slice of cheese when I got home at 5:00 and then went to meditate at 6:00.
After meditation I went to El Super to shop. Wednesday is the produce discount day. Cucumbers, green onion bunches, and small avocados were 4 for $.99. Limes were 2 lb. for $.99, including my favorite, sweet limes. Sweet potatoes, zucchini, bananas, and pineapples were 3 lb. for $.99. Yellow onions were 4 lb. for $.99. You get the idea, fabulous values.
When I returned home at 8:00 Suzette had chopped yellow squash and zucchini to sauté. I chopped ½ of a small yellow onion and then she began sautéing the vegetables. I sliced the four portobello mushrooms Suzette had cleaned and Suzette cooked them with the two hamburgers I had taken out of the fridge at 5:00, adding slices of Dubliner cheddar cheese to melt covered over each after flipping the hamburgers.
When the squash and hamburgers were sautéed we were ready to eat.
We poured out the rest of the 2016 Emma Reichart Rose’ and enjoyed a lovely dinner.
Mushrooms piled on top of hamburger laid on top of sautéed onion and squash medley
I ate some pistachios after dinner instead of dessert.
Bon Appetit
