I drank a hot chocolate coffee for breakfast.
Peter Eller came by at 11:30 and suggested we go to East Ocean for lunch. We both ordered Moo Goo Gai Pan with sweet and sour chicken. We both loved the egg drop soup with its delicious chicken broth and clouds of egg. Peter took his entire with fried rice and I took mine without rice.
We said hello to Wayne and Elaine Chew who came in for lunch.
I filed a pleading during the afternoon and settled a case, so was very busy.
Also, there was a drop in the high tech portion of the market. My portfolio dropped 1% in value today.
When Suzette came home I made guacamole and we ate it with fresh snow peas instead of corn chips.
Then about 7:00 we made dinner. We did not feel like cooking a full meal. We agreed to heat up the spaghetti sauce. I added a 8 oz. can of tomato sauce and a handful of fresh chopped oregano to freshen the sauce and a bit of water to loosen it into a thinner sauce to better absorb the new ingredients.
Suzette used a vegetable peeler to cut a Mexican squash into strips. She put the strips into a Pyrex baking dish with a bit of water, covered it with Saran Wrap, and microwaved it to cook the squash strips. I put a small handful of penne pasta in a pasta bowl and heated it. Then we placed strips of cooked squash in the bowl and finally spooned the spaghetti sauce onto the squash strips and garnished the dish with strips of Pecorino Romano cheese.
I went to the cellar to fetch a bottle of Aquino Chianti Reserva (Trader Joe’s $5.99).
I found the dish interesting and enjoyed the combination of pasta, squash, and spaghetti sauce.
We ate in the garden, which was lovely this evening.
Then we watched game four of the NBA Finals. The Cavaliers finally won their first game to stave off elimination.
