2015 Easter Brunch Dinner
Fish and Chips, sort of
We had our now
traditional Easter Brunch: a boiled Dungeness Crab (Costco Fish Fiesta
$5.99/lb.) with champagne and tartare/migonette sauce. I made the sauce with pickled onions (made for
us by Rosemary) and added 1/3 cup mayonnaise, 1 tsp of horseradish, juice of about ¼ of
a lemon, and 2 Tbsp. of sweet pickle relish.
We opened a
bottle of Argyle Brut champagne.
We actually
made a fried rice dish this year to go with the crab using PPI rice, asparagus tips, ginger and
onion and garlic with Suzette’s sauce she uses for garlic eggplant from “Mastering
the Art of Chinese Cooking”, which includes some oyster sauce, soy sauce Chinese cooking
wine and Aji Mirin this time.
She fried an
egg into an egg pancake and cut it into pieces and put the pieces of egg into
the fried rice also.
We took
everything out to the garden and enjoyed our newly cleaned garden and the warm
sunlight.
For dinner
we decided to use the piece of halibut Suzette bought yesterday at Costco for
$9.99/lb. to cook fish and chips. Instead
of frying potatoes, we decided to fry the PPI roasted potatoes from Friday
night’s dinner. Suzette used a recipe
for fish and chips that we liked very much from the
“Betty Crocker Cookbook”. Here it is:
I went to the
garden and picked a handful of fresh chard and Suzette mixed that into the
potatoes that she sautéed them in the olive oil with the potatoes, mint and
garlic.
We drank
Leese-Fitch Sauvignon Blanc, which was too dry and acidic for the dish. We would have been better off with beer.
