November 4, 2025 Breakfast - Granola with Milk, yogurt, and Blueberries Lunch - Enchiladas at Mary and Tito’s   Dinner - Stir Fried Bok Choy with piñon Nuts and Rice and Cobbler with Brandied Pears Poached in red wine and honey


Today the market melted down and my portfolio lost over 2% and this was a day for paying bills for insurance on 524 Romero and taxes for oil and gas properties in Texas and my Bernalillo County properties.


I ate granola with Milk, yogurt, and Blueberries for breakfast.


Then finished the pleading and paid property taxes on two oil and gas properties by 1:30 and then drove to Mary and Tito’s where I ordered blue corn enchiladas with beef and double beans. The dish was more elegantly simple than with the egg and cost less than $10.00.





I then drove home and worked on several matters including paying property taxes on Bernalillo County properties and meditating from 3:35 until 4:00, when I took checks for taxes to the County Treasurer’s office, which helped me accumulate over 4000 steps.


I was feeling better and seem to have more energy today. I hope I did not interfere with my progress by eating a large quantity of stir fried baby bok Choy with green rice and the last of the cobbler with Brandied Pears Poached in red wine and honey to get rid of some of the food left in the fridge.




 We watched two repeat episodes of Finding Your Roots after dinner and then 

cleared the fridge of everything that will not last a month and washed dishes and pots and Suzette started a final load of laundry and I took the trash out to the curb.


We were in bed by 9:30.


Tomorrow we start our trip to Japan by flying to Honolulu for two days.


I will try to blog about the highlights.

I woke up at 6:15, which yesterday would have been 7:15, due to daylight savings time.


I ate a bowl of granola with milk, yogurt, and blueberries and talked to Willy for a few moments. Willy has been experimenting with short term (one week) calls. He explained it but I decided to not try one because Nvidia took off and was up $6.50 at the open and I was happy with my simple long positions. The market slumped toward the end of the day from its opening highs, but my portfolio still made a slight gain of just over .6%, thanks mainly to Nvidia.


I went to the bank with Suzette shortly after 9:00 to get some cash for the trip and walked home.


I worked on my pleading until 12:30 and then ate the leftover 1/2 of the chirashi I ate at Crazy Fish on Friday.



I was still quite good, especially with the daikon and Korean basil I pickled last week.


After lunch I finished my edit of the pleading and sent it to clients for review around 4:00.


I made two open faced sandwiches on baguette smeared with May and garnished with slices of Lebanon Bologna, Irish cheddar, and red onion.


At 4:50 I tried to call the Sheriff’s civil service department but they had closed.


At 5:00 I walked around the block to Carol’s house to fetch her so we could have her tour the house and garden and discuss her duties while we are gone.

Also at 5:00 Suzette started heating the Black bean, tomato, and Kielbasa stew and cooked two sweet potatoes in the microwave and diced them and sautéed the sweet potato Cubes.


After touring the house and garden I walked Corol back to her house. As a result of the activity today I accumulated over 4000 steps.


At 6:00 Suzette served bowls of the Bean stew she made last night, garnished with sautéed sweet potato cubes.





I poured out the 111 red blend and also served myself a glass of water.


I loved the combination of black beans and diced Kielbasa with sweet potato.


After dinner we watched the Antique Roadshow and bits of the Dallas v. Phoenix Cardinals NFL match up.


Dallas got behind and stayed behind through most of the game, losing by 10 points due to five turnovers.


Suzette went to bed at 8:00 and I followed at 9:30 and blogged until 10:00.

November 2, 2025 Breakfast - Gravad Lax on Bagel Lunch - Cobb Salad at Two Fools Tavern. Dinner - Mapo Dofu and Stir Fried Bok Choy and Rice


I woke up at 7:00 and made a list of numbers that might be needed during our absence. I then dressed and at 8:15 joined the teleconference between Luke and Suzette regarding the remodeling of his kitchen and bathroom. During the call around 9:00 I toasted three 1/4  thick slices of bagel, and spread them with cream cheese and avocado and garnished them with slices of red onion, Gravad lax, and capers.


 When the call ended at 9:30 I worked until 12:30 when I ate the last cup of the poached salmon in linguine cream sauce and then we drove to Two Fools Tavern to hear David and Nickelle play Gaelic music. We ordered beers and perused the menu. I decided to order a large Cobb Salad. The music and salad were wonderful.




We left around 1:30 and drove to Savers at Renaissance and then Home Depot.


Then we drove home and I rested until 4:30 and then destemmed the rest of the oregano. Suzette had destemmed the lemon thyme and mixed and filled jars of Herbs de Valencia, a mixture of lavender, thyme, tarragon, and oregano from our garden.


I then chopped four baby bok Choy and separated the white stalk pieces from the green leaves and added ginger garlic, white onion and a shallot to the white pieces.


I then stir fried the heavier white ingredients for about ten minutes until they started to soften and then added the green leaves and stir fried them for a couple of minutes. Then I added a seasoning of rice cooking wine, sesame oil, and corn starch mixed with about 1/2 cup of water and the leftover stir fried baby bok Choy from yesterday’s dinner and mixed everything together. The sauce did not coagulate today. 



Suzette then plated PPI rice and Mapo Dofu and heated each plate in the microwave. I turned the baby bok Choy to low and spooned some around the Mapo Dofu.


The two dishes were great together. We shared a Negra Modelo.




At 6:00 we watched a new episode of Miss Fisher. Then at 7:00 I watched Seattle crush Washington DC in the first half. I turned off the TV until 8:00 when I watched Maigret, Gold, and Patience until 11:00 and blogged and drank green tea.  


Suzette went to bed at 8:00.


My niece, Rebecca, gave birth to a baby boy today. Billy and Elaine went to NYC yesterday, so they were present for the birth of their grandson. Congratulations.

November 1, 2025 Brunch - Steak, shallot, and Mushroom Omelet. Snack - Carne Adovado Burrito. Dinner - Poached Salmon with Linguine in Tallegio Mornay Sauce


We made brunch around 10:30. Suzette made a steak, shallot, and shiitake mushroom omelet. She sautéed the mushrooms until they turn golden brown and have a firmer texture. She also used the Murray’s brie Supreme to melt in the omelet. It was a great omelet. I ate buttered toast spread with French berry preserves after brunch.




Then I watched No. 20 ranked Texas beat No.  9 ranked Vanderbilt by only three points. It was a really good game. I also thawed out four small fillets of salmon.


Then I watched the first half of Liverpool v. Aston Villa.


At 4:30 we dressed and I heated the leftover Carne Asado from Thursday lunch at Monroe’s and toasted a flour tortilla and Suzette and I shared a burrito.


Then at 5:30 we drove to Popejoy for a performance by the New Mexico Philharmonic. Then at concert was wonderful with a contemporary piece by Lee, Phoenix Ascending.

Then before intermission the symphony played Petrusha by Stravinsky 


After the break the Symphony played Brahms’ concerto for Violin. The soloist playing the violin was fantastic.


After the concert, we returned home at 8:15 and turned on the World Series and Suzette poached the thawed salmon fillets with chopped onion, thyme, white wine, and warm chicken broth in a medium of onion, garlic, and thyme. When the salmon was poached fSuzette added the PPI linguine in Mornay Tallegio sauce and reduced the liquid slightly to make a salmon and pasta soup. We drank the last of the Alsatian white wine with dinner.


After dinner we watched game seven. The Dodgers got a run in the 8th and the 9th to tie. Suzette drank a homemade limoncello and I drank a Genepy and cognac. After several amazing plays including two throws to home to force outs, the Dodgers finally won in the 11th inning.


Suzette went to bed but I stayed up to eat the slice of Costco pumpkin cheese cake with a cup of chai and watched TV until midnight when I went to bed after blogging this blog.


Today every meal was good, especially considering the ease of preparation.

October 31, 2025 Lunch - Chirashi at Crazy Fish  Dinner - Bean Stew and Stir Fried Bok Choy with pinon nuts


I had a busy but pleasant morning. I ate a chocolate croissant with a cup of tea around 7:45. The market was up early but gyrated all day and trailed downward at the end for a minimal gain.


I dressed and at 9:00 I went to the Sheriff’s Civil Service Division in the County building to deliver my two summons for service.


Then I drove to Wells Fargo to open a new checking account since a fraudulent check caused the closing of my old checking account a week ago.


I had told Murat I would meet him at Crazy Fish at 11:00 and my banking ended at 10:20 so I walked to the Birdland store AT 3213 Central that is now Half-life production company and talked to Nickelle, who surprised me by handing me the rent check.  Their business seems to be doing well.  They are the official production Compny for the Lobos basketball team, which is a big deal.


I then walked back to the bank and deposited the check.  Finally at 10:50 I walked across the street to Crazy Fish.   I read and waited for Murat, who arrived a few minutes after 11:00.


Murat is from Amman, Jordan, and apparently has never eaten raw fish before but he is curious and when I ordered Chirashi, he ordered it also.


I showed him how to make a dipping sauce with wasabi and soy and how to dip a piece of fish in the sauce with a piece of Pickled ginger and he quickly began eating and enjoying the fresh raw fish.

 

The chirashi came with two slices each of salmon, Aji tuna, escarole, Yellowtail, annd albacore tuna. I ate my usual 1/2 and boxed the other half to go.


Murat brought me a bottle of his uncle’s honey. His uncle lives high above Santa Fe and has 12 hives. It is the best honey I have ever tasted.


I then drove home and worked on my pleading until 3:45 when I got hungry and decided to make a snack. I sliced several slices of  Lebanon Salami and Manchego cheese and put them on one side of a flour tortilla and folded it in half and sautéed it in melted butter until each side was lightly browned.  I sliced it in half and made a cup of tea. 


Before I had eaten the first half Suzette arrived around 4:15, so I shared the second half with her. She had not eaten lunch, so we decided to make dinner, but there were two complicating factors, it was Halloween, which meant we had to give candy to hundreds of children. Suzette had dressed for the occasion with her red Dracula T-shirt and black and red cape.


We also wanted to watch game six of the World Series, so very little effort was available for dinner prep.


We decided to eat the PPI Bean, pork, and Kielbasa stew Suzette had made with the a bag of large red and green beans she received in her last shipment of beans sent by Rancho Gordo Bean Club and I would make stir fried Baby Bok Choy with the bok Choy I bought at Talin this week.


So at 6:15 we turned on the World Series and Suzette opened the front door and the screen door and moved a chair and the large container filled with chocolate candy onto the porch and prepared for the younger children, who we love to give candy to who mostly come while it is still daylight.







While Suzette watched for trick or treaters, I began to prep the Bok Choy by slicing the heavier white stems from the tender green leaves and minced two small shallots, five cloves of garlic, a quarter size of almost fresh ginger, and sliced two fresh shiitake mushrooms. Suzette put the casserole with the bean stew on low heat and we gave out candy and took a few pictures of several of the more creative costumers of the trick or treaters. 


Suzette always wants to engage the older trick or treaters with a question. This year it was, “How do you think Donald Trump is costumed for Halloween this year.” The answer she expected was, “As a King.” She got lots of interesting feedback with that question.


We are supporting LA in the World Series, so when we discovered that LA had a 3 run 3rd inning and Suzette got hungry around 7:15, we shut down Halloween and I started stir frying the bok Choy.


I heated peanut oil and stir fried the white stems,garlic, mushrooms, and ginger and threw in a handful of pinon nuts. I made a seasoning of 2 heaping tsp. of cornstarch, 1 T. of soy, 2 T. of rice cooking wine, 1 tsp. of sesame oil, and 1/2 cup of water. After about 6 minutes when the heavier ingredients began to soften and change color I added the bowl of green leaves and let them sit on top of the other ingredients for several minutes to steam. Then I stirred the leaves into the other ingredients and stirred in the seasoning. The seasoning quickly thickened and congealed, so I added about another 1/2 cup of water to return it to a thick brown sauce. We then each filled bowls with one-half bean stew and one-half bok Choy.  Both dishes were delicious and filling. Suzette thought the piñons added too many calories to the bok Choy and made me promise to eliminate them from future dishes, since she has lost 18 pounds and is trying to slim down further.



We changed into our sleep wear and got into bed to watch the rest of the game around 8:30. Suzette fell asleep but I watched LA win in a very exciting last inning. The Blue Jays got runners on second and third with one out in the 9th and it looked like they would tie or win the Series with one more hit or home run, but the game ended abrupt with a running catch of a line drive that would have scored at least one run and a throw to second to force the second and third out by Keke Rodriquez.


We then went to bed when the game ended around 9:15.


I woke up at 1:00 to finish this entry with a cup of chai.


To prove we are not Spartan dieters, we each ate two or three candy bars during our duties of giving out candy.
