November 1, 2025 Brunch - Steak, shallot, and Mushroom Omelet. Snack - Carne Adovado Burrito. Dinner - Poached Salmon with Linguine in Tallegio Mornay Sauce
We made brunch around 10:30. Suzette made a steak, shallot, and shiitake mushroom omelet. She sautéed the mushrooms until they turn golden brown and have a firmer texture. She also used the Murray’s brie Supreme to melt in the omelet. It was a great omelet. I ate buttered toast spread with French berry preserves after brunch.
Then I watched No. 20 ranked Texas beat No. 9 ranked Vanderbilt by only three points. It was a really good game. I also thawed out four small fillets of salmon.
Then I watched the first half of Liverpool v. Aston Villa.
At 4:30 we dressed and I heated the leftover Carne Asado from Thursday lunch at Monroe’s and toasted a flour tortilla and Suzette and I shared a burrito.
Then at 5:30 we drove to Popejoy for a performance by the New Mexico Philharmonic. Then at concert was wonderful with a contemporary piece by Lee, Phoenix Ascending.
Then before intermission the symphony played Petrusha by Stravinsky
After the break the Symphony played Brahms’ concerto for Violin. The soloist playing the violin was fantastic.
After the concert, we returned home at 8:15 and turned on the World Series and Suzette poached the thawed salmon fillets with chopped onion, thyme, white wine, and warm chicken broth in a medium of onion, garlic, and thyme. When the salmon was poached fSuzette added the PPI linguine in Mornay Tallegio sauce and reduced the liquid slightly to make a salmon and pasta soup. We drank the last of the Alsatian white wine with dinner.
After dinner we watched game seven. The Dodgers got a run in the 8th and the 9th to tie. Suzette drank a homemade limoncello and I drank a Genepy and cognac. After several amazing plays including two throws to home to force outs, the Dodgers finally won in the 11th inning.
Suzette went to bed but I stayed up to eat the slice of Costco pumpkin cheese cake with a cup of chai and watched TV until midnight when I went to bed after blogging this blog.
Today every meal was good, especially considering the ease of preparation.
