July 7, 2025 Lunch - Lamb, shallot, mushroom and egg burritos Dinner - Duck Salad


I started working at 5:30 a.m. on Rahim’s construction contract and finished by 1:30.


I ate a quick breakfast of a latte macchiato and a chocolate croissant.


Then at 1:30 I reheated our lamb, mushroom, shallot, and egg omelet from yesterday’s brunch and wrapped it in a warmed burrito sized flour tortilla with slices of 1/2 avocado and a few dashes of Red sauce on top and lettuce from the garden and three freshly fermented dill pickles on the side.


Suzette arrived just as I was finishing making my burrito and she made a similar burrito with her leftover omelette.




I drank water for lunch.


I then worked on the Earn Note payment and determined what I needed to disburse for my required minimum distributions from my IRAs and how many shares of Earn common I wanted to buy and how much cash I would take.


I got busy around 3:00 with a closing and finished a letter on it at a bit after 5:00 on that transaction.


I watched the news for a few minutes when Rahim called from India to discuss his proposed contract.


Around 6:00 we finished our conversation and I made a white vermouth cocktail with a slice of orange.


Perhaps the most dramatic thing to happen today was watching the finish of Stage 3 of the Tour de France where a high speed crash near the finish took the best sprinter wearing the green jersey out of the race with several broken bones. The tension is always in the Tour de France that one error by another rider can end your dream of finishing in a high position.


We were not terribly hungry but around 6:30 we fixed duck salads with the slices of duck from our Saturday dinner, plus lettuce from our garden, sliced radishes, 1/2 of an avocado slices, 1/3 of a cucumber peeled, seeded, and sliced, and several green onions sliced thinly plus the leftover cooked snow peas and several sliced of the pickled beets Suzette made yesterday.


We drank the rest of the Albariño with dinner.


Then we watched two episodes of Antique Roadshow and Suzette went to bed. I stayed up and ate a bowl of cherry truffle ice cream with rum and went to bed to blog at 10:30.
