July 6, 2025 Brunch - Lamb, Onion, and Mushroom Omelette. Dinner - Braised and Stewed Beef Short ribs, carrots, garlic, and onion in wine with steamed Snow peas and Cassarecce pasta.
Another two meal day. In the morning after the news at 10:00 we trimmed the bushes and cut down several invasive trees.
Then at 10:30 Suzette floured and braised the three beef short ribs we bought yesterday at El Super. I slices thin slices of onion peeled and crushed about six or seven cloves of garlic that suzette sautéed in the beef fat. I peeled and cut slices of four carrots and Suzette fetched sprigs of rosemary that we put in the crockpot with the carrots. When the onions and garlic were braised Suzette added red wine to the skillet and then poured the beef,and red wine mixture into the crockpot with the carrots and rosemary.p and turned on the crockpot.
Then at.11:30 we cooked a lamb, shallot, and Mushroom omelette with the four remaining grilled lamb chops and three eggs.
We drank glasses of orange juice and I drank a cup of tea with the omelette.
Neither of us could finish our portion of omelette s we boxed it and put it into the fridge.
After lunch Suzette soaked some beans and we rested until 3:30 when we drove to Total Wine to buy scotch and Negra Modelo. I saw that there was a birthday gift on a message from Total Wine and when I asked I was told I could buy any direct import wine up to $14.99 for a penny and receive a gift bag. So I went to the Alsace and Loire wine area and selected a Sylvanar white listed for $14.99.
I was happy that I was gifted a bottle by Total Wine.
We then drove home and iput the bottle of Corbieres red wine given to us by Kylene and Barry into the freezer

5:00 we started cooking. Suzette destemmed the snow peas we bought at El Super and steamed them in the microwave.
Then she boiled a bag of Casarecce pasta. We then removed the beef short ribs and solid ingredients from the crockpot and poured the sauce into our new sauce separator and poured off the sauce into a sauce pan and added the solid ingredients to reheat.
When the pasta was ready Suzette filled pasta bowls with pasta and we ladled a beef short rib and carrots and sauce over our pasia and poured wine and Suzette added blanched snow peas and we ate a terrific dinner with a wine with lots of character that suited the dish.
There was lots left for another meal.
After dinner we watched PBS and sipped the rest of the wine and I spread blue cheese on a slice of pumpernickel as a cheese course with my glass of wine.
Suzette went to bed at 9:00 after Grantchester and I stayed up to watch Atlantic Crossing and Sisi and blog.
It is easy to eat only two meals a day if both are exceptional like the two we ate today.
